Mushroom Kung Pao


Kung Pao chicken is an authentic Szechuan dish which can also be prepared with vegetables,mixed veggies, or shrimp. It is very popular and has a wonderful unique taste. Here I am trying the basic Kung Pao recipe with mushrooms. Mushrooms came out real tasty and juicy. I have not added peanuts, but instead added peanut paste. I know that you guys might be wondering why I named it Kung Pao without adding one of the  most important ingredient of Kung Pao which makes it unique-  crunchy peanuts :). But my family did enjoy the flavor and taste. This is very easy to make.

Ingredients
Mushroom- 20 medium sized
Onion - 1 medium
Bell pepper- 1 medium
Broth( Chicken or vegetable) - 1 cup
Vinegar- 1 tsp
Soya Sauce- 3 tsp
Dark Soya sauce- 1/2 tsp
Hoisin sauce- 1 tsp
Oyster sauce- 1/2 tsp
Chili garlic sauce- 1 tsp
Pepper powder- 1/2 tsp
Sugar- 1 tsp
Egg - 1
Peanut paste- 1 tsp
( or roasted peanuts- 1/2 cup)
Corn flour - 2 tsp
Corn starch- 1 tsp
peanut oil for frying 


Clean and cut mushrooms into desired shapes. Marinate it with one tsp of soya sauce, egg and two tsp of flour and blend well.
In a large bowl add in the broth, vinegar, soya sauce, hoisin,  oyster sauce, chili- garlic sauce, pepper powder,sugar and keep aside. Cut onions and bell pepper into cubes. 
Heat oil in a pan and fry mushrooms in batches and set aside. ( you can adopt the stir fry method also)
Stir fry onions and bell pepper( celery also can be used) and strain out and keep aside. In the same pan heat the broth mixture till it starts to boil. Drop in the onions, bell pepper, mushrooms and peanut paste.( if you are adding roasted peanuts add in this stage) Simmer for two minutes. Mix one tsp of corn starch with 1/3 cup of water. Pour in little by little and see whether the Kung Pao has attained the desired consistency. Serve warm.
