Choco Balls



Choco Balls

Choco balls is quick yummy treats for kids and can be made in a jiffy. It has only few ingredients like biscuits, condensed milk and cocoa. You can change the recipe and add ingredients of your choice like nuts, coconut or dry fruits.

Ingredients
Arrowroot biscuit - 12-15
(Graham crackers or any biscuits of your choice)
Cocoa powder- 2 tbs
Condensed milk- 1/2 tin
Sugar- 2 tbs (optional)


In a food processor make a fine powder of biscuits, cocoa powder and sugar. Keep two tbs of this mixture aside. Empty the rest into a bowl and mix condensed milk. Mix till it resembles damp sand. Grease your hands and make small balls. Roll the balls in the biscuit crumble mixture(you can also use coconut of sprinkles instead) Keep this in the refrigerator for an hour and enjoy!

Mathi/ Sardine Pollichathu




Mathi/ Sardine Pollichathu
Spicy sardine fry is my absolute comfort food. It is only once in a while that I, experiment recipes with this fish. Earlier I post Karimeen polichathu  and chemeen polichathu.Mathi /Sardine fish pollichathu is also yummy.Pollichathu refers to fish masala wrapped in banana leaf and is slow cooked so that the fish masala gets steamed. The aroma of banana leaf also is significant in this recipe. Try this recipe,you will surely love it.

Ingredients
Sardine-6-8
Finely minced shallots-  1 cup
Ginger- 2 inch thick finely chopped
Garlic- 6-7 finely chopped
Tomato puree- 1/2 cup
Thick coconut milk-1/2 cup
Chilly powder- 1 1/4 tsp
Turmeric powder-1/3 tsp
Coriander powder-1/2 tsp
Pepper powder- 1/2 tsp
Vinegar- 1 tsp
Garam masala- 1/2 tsp
Fennel powder-1/2 tsp
Curry leaves
Coconut oil- 2 tsp
Banana leaf for wrapping 




Clean fish and marinate with pepper powder, salt and turmeric powder. Set this aside for five minutes and fry in medium flame till fish is cooked and both sides are evenly browned up. 
Heat oil in a pan and add minced onion,garlic,ginger and curry leaves and saute till golden brown. Pour tomato puree and cook till oil separates.Add turmeric powder, salt,coriander powder, chilly powder and garam masala and saute for a minute. Now add coconut milk and vinegar and simmer till the gravy thickens and switch off the flame.
Take banana leaf  (you can make two small parcels with this recipe) and gently place on the gas stove flame turning each side quickly till it changes color. Place this leaf on a plate and spread a thin layer of  masala. Place fried fish and spread some more masala on top of the fish. Fold in from all side wrap the leaf and tie it. (Have a look here ) . Heat a manchatti ( earthen ware) with lid or a tawa. Grease it with a little oil and place the wrap in and cover and cook for 3-4 minutes turning sides in between. Let it sit in the wrap and cool down before serving.Serve with rice or pathiri.

Ari Orotti




Ari Orotti
Orotti is a simple  and delicious flat bread made with roasted rice flour. Earlier I shared  a recipe for pathiri , the soft and thin flat bread. Orotti is very similar but thicker and crispy. Orotti can be made with rice flour, semolina or wheat flour. Try this with spicy chicken or mutton curry.

Ingredients
Roasted rice flour- 2 cups
Water- 2 cups
salt -to taste
sugar- 1 tsp
coconut oil/butter- 1 1/2 tsp
Coconut milk - 1/2 cup
Grated coconut- 3/4cup
cumin - a pinch


Boil water along with salt and sugar. When it comes to a rolling boil add coconut oil.
Take the flour in a large bowl and make a well in the center. Gradually pour  water little by little and mix with a wooden spoon . Add grated coconut, coconut milk and cumin seeds and mix well.Allow this to cool down and knead into a smooth dough and make small balls

Make lemon shaped balls and flatten on a greased hot tawa. Wet hand with water and press and spread the dough as thin as possible. If you are not comfortable with spreading on hot tawa use plastic cover or butter paper to spread and then place carefully on the tawa/ hot pan. Cook evenly on both side.When one side gets brown spots flip to the other side. Continue with the rest of the dough to make small orotti.Serve with any spicy curry.

Kanava/Koonthal/Squid Fry




 Kanava/Koonthal Fry

Squid  or Kanava fry is a yummy side dish for rice. Today's recipe is quick and spicy version.  It is   pan fried, but if you like it crispy try deep frying. Try this recipe,you will surely love it

Ingredients
Cleaned Squid-1 lb
Shallots-15
Thinly sliced ginger- 1 tsp
Curry leaves- a few
Ginger garlic paste- 2 tbs
Turmeric powder- 1/2 tsp
Chilly powder-2 tsp
Vinegar- 1 tsp
Garam Masala- 1/2 tsp
Coconut Oil
Salt-to taste


Clean and cut the squid into small pieces. Marinate with chilly powder, turmeric powder, salt, ginger garlic paste  and vinegar. Keep aside for 10 minutes.
Heat oil in a pan and add chopped ginger, onion and curry leaves. Saute till golden brown. .Add marinated squid  and saute in high flame for 2-3 minutes. Cover and cook for 2-3 minutes.Add garam masala and if there is any water let it evaporate and fry till all the masala gets coated with the squid.Add a few drops of coconut oil and a few fresh curry leaves and switch off the flame.Serve with rice

Fruit and Nut Fudge



Fruit and Nut Fudge

  Fruit and nut fudge is delectable home made confectionery with milk and white chocolate. This rich and creamy delight is also a perfect holiday treat . There are so many different versions and flavors of fudge out there.You can do this recipe with dark chocolate too. Also add any dried or caramelized fruit and nuts of your choice.
Ingredients
Condensed milk- 1 tin
Butter-2 Tbs
Vanilla essence- 3/4 tsp
Rose essence - a few drops(optional)
 Milk chocolate-  1 1/2 cup
 Pistachios/ Chopped nuts of your choice- 1/3 cup
Glazed Cherries- 1/4 cup


Heat condensed milk and butter in a heavy bottom pan on low flame. Stir continiously till it comes to a boil.Simmer for another 3-4  minutes .If you have a candy thermometer the temperature should reach  230 degree or the soft ball stage. To check whether it reached the soft ball stage drop half a spoon of the mixture into cold water. After a few seconds you will be able to take it out from the water and press into a soft ball.
Switch off the heat and add 1 tsp vanilla and white chocolate. Continuously whisk till all the chocolate gets incorporated and you have a smooth texture and finally add rose essence,glazed cherries and chopped nut. Continue whisking till the mixture starts thickening.
Prepare an eight inch square pan. Line it with aluminum foil or with wax paper. Pour the mixture and spread evenly with the back of a spoon. Allow this to set for about two hours and then chill it in fridge,preferably over night. Once it is firm to touch  cut into pieces and serve.
