Today's recipe is my first post of 2018. Happy New Year to all my friends and readers. Wish you all a very happy and prosperous New Year!

Victoria Sandwich or the Victoria sponge is a very traditional cake .There is a nothing fashionable about recipe,it is a simple sandwich cake.But if you can make this basic sponge cake than you can make hundreds of adaptions and it is perfect for parties or picnics.These sandwiches are popular English teatime treats.Spongecake's are sliced and sandwiched with jam and topped with another layer of butter cream,vanilla cream or whipped cream and sprinkled with sugar .This tea time sandwich is named after Queen Victoria and reminds us of the era of tea parties and the practice of inviting friends to come over for tea in the afternoon.

This recipe calls for equal proportion of egg,butter, sugar and flour. The egg and baking powder gives it the light airy texture. The key to this recipe is to not over mix and over bake. I reduced the amount of butter, but if you want the traditional version measure and weigh all the ingredients in equal proportions.

Ingredients
All Purpose flour- 250 grams
Sugar -100 grams
Eggs 4
Butter 100 grams
Baking powder 1 tsp
Milk- 2 tbs
Orange blossom water- 2 tbs
Red Currant Jam/Strawberry Jam- 1/3 cup
Icing Sugar- 2 tbs

For the frosting (optional)
Confectionery sugar- 1 cup
Butter- 1/2 stick
Lemon juice- a few drops
Whipping cream- 1- 2 tbs


Allow butter and eggs to come to room temperature. Sift flour,baking powder and salt 2 times and keep aside.

Pre heat oven to 350 degree  F. Grease two baking pan, either 8 inch round pan or rectangular pan.

In a bowl add egg yolks, sugar and soften butter. Whisk till light and creamy. Add the shifted flour and gently mix till combined.
In a separate bowl whip egg whites till it form soft peaks.Fold this egg white with the batter along with orange blossom water.The mixture should be smooth,dropping consistency. If you find the batter thick add milk as needed .Do not over mix the batter.
Pour into the greased pan and smooth the top with a spatula. Bake for 20-25 minutes, till there it has a golden crust and is spongy to touch.Transfer to wire rack and allow the cake to cool down completely.


To make the frosting
Whisk sugar and butter,first in low speed and then increase the speed and beat for three minutes. Add vanilla and cream and beat for one more minute. Keep in fridge till it is ready to use.
To Assemble
When the cake is cool  sandwich with thick layer of any jam of your choice.(I used red currant). Spread a layer of butter cream and top off with the second layer of cake.Dust with icing sugar and serve.

Kerala Chicken Roast

Spicy Kerala Chicken Roast is another nadan recipe and a family favorite. It is a dry version and is great accompaniment with rice, chapathi or fried rice.The chicken in this recipe is usually deep fried or shallow fried, (some times whole stuffed chicken ) and then coated with the masala. Here I have shallow fried the chicken.It  tasted delicious with fried rice. Give this recipe a try...



Ingredients
1)Chicken - 1 lb
 Chilly powder -1 1/2
Turmeric powder-1/2 tsp
Powdered Garam masala-
(Two tsp of fennel powder, 5-6 cloves,2 inch stick
cinnamon, a small piece of nutmeg, 2 cardamon )
Vinegar- 1 1/2 tsp
Salt to taste

For the Masala
Thinly sliced Onion- 2 medium
Thinly sliced ginger- 3-4 tsp
Thinly sliced garlic- 3-4 tsp
Chopped green chilly- 2
( I used 2 Jalapeno pepper instead of green chilly)
Coriander powder- 3/4 tsp
Chilly powder- 1/2 tsp(optional)
Turmeric powder- a pinch
Meat  Masala- 1 tsp
Curry leaves
Pepper powder- 1/2 tsp
oil

Nadan Vaala Meen Curry
This is a nadan style fish curry. It is my grandmothers recipe. When ever she gets vaala meen/ribbon fish/belt fish she makes a similar curry . This is a varutharacha meen curry/roasted coconut gravy. You can also make it without roasting the masala. But the roasting gives a distinct aroma and enhances the taste of the curry. You can add regular tamarind as souring agent or fish tamarind/kudampuli. Try this you will surely love it.

Ingredients Vaala meen- 1 kg
Pearl onion- 2 cup (roughly chopped)
Dry Kashmiri red chilly-12-15
Coconut grated- 1 cup
Thondan mulaku/banana peppers-2
Ginger- 1/2 inch thick
Muringakka/drumstick- 10-12 pieces
Kudampuli/Malabar Tamarind- 3 pieces
(or tamarind lemon sized ball)
Turmeric powder-a pinch
Mustard- 1/2 tsp
Fenugreek seeds- 1/3 tsp
Curry leaves- 1 spring
oil and salt to taste

Mutton Fry

This is a recipe for delicious Kerala style mutton fried with a blend of exotic spices and regional flavors.It is simple and quick recipe and should admit that I loved this ever since I have tasted it. This is not deep fried as the name suggest,but is first cooked and then slightly pan fried.
Ingredients
   Mutton 1 1/2 lb

1) Shallots- 1 cup chopped
Ginger paste- 1 1/2 tsp
Garlic paste- 1 tsp
Pepper powder- 3/4 tsp
Garam masala- 3/4 tsp
Turmeric powder- 1/2 tsp
Coriander powder- 1 tsp
salt to taste

2)  Onion finely chopped- 1/2 cup
Thinly sliced ginger- 1 tsp
Green chilly-1
Curry leaves- a few
Crushed dry red chilly- 1 tsp
Crushed fennel seeds- 3/4 tsp


Clean mutton and marinate it with all the ingredients listed under one (1) and keep aside for half an hour.Pressure cook the mutton with half cup of water in medium flame till four whistles and if there is excess gravy after you open the lid of the pressure cooker,continue cooking till all the water evaporates…
