Today I am sharing a recipe that is quick and easy to make and is healthy too. Mushroom egg thoran is an effortless side dish for rice. Do you love scrambled eggs?  I make them all the time for breakfast. Mushroom and eggs are the preferred combination for breakfast. Why not try it for lunch? Mushroom, eggs, and coconut are combined to make a delicious, Kerala-style thoran for lunch. Thoran is Kerala's version of a quick vegetable stir fry with coconut and spices. Growing up, we often have scrambled eggs for lunch. Kerala style scrambled egg/ mutta chikkiyathu is slightly browned, and crispy with onions, coconut, and curry leaves. Mushroom is not commonly used to make thoran, but it tastes amazing. The egg and mushrooms taste so good with the sweet crunch of coconut, and the flavor of cumin and garlic. It is worth a try and goes well with steamed rice and chapati.
 
If you are craving a simple South Indian meal, then you must try this delightful thoran. This stirfry retains the delicate taste of mushrooms. Eggs and coconut complement each other. Mushrooms add a depth of flavor, and the masala and spices add a subtle peppery heat. You can use freshly grated coconut or frozen. Use regular white or brown button mushrooms. Grated coconut, cumin, garlic, and curry leaves add flavor and taste. You'd be surprised at how simple and tasty this can be, and it is ready in under 15 minutes. 


 

How to Make Kerala Style Egg and Mushroom with Coconut
 
Ingredients
Mushroom- 8 oz. pack
Egg- 2
Grated coconut- 1/2 cup
Onion- 1 medium
Green chilly-1
Garlic- 3 pods
Turmeric powder- 1/3 tsp
Chilly powder- 1/3 tsp
Pepper powder- 1/3 tsp
Cumin powder- 1/3 tsp
Garam masala- 1/3 tsp (optional)
Mustard seeds- 1/3 tsp
Curry leaves - a few

Wash and clean mushroom, pat dry, and chop into small pieces.
In a large, heavy-bottom pan, heat two tablespoons of coconut oil and add mustard seeds. When the mustard seeds splutter, add curry leaves, chopped onion, green chilly, and garlic.  Saute the onions till golden brown. Add turmeric powder,  salt, and saute for a minute. Increase heat to medium-high, and add mushrooms. Stir fry for two minutes or till all moisture evaporates. Add beaten egg and stir fry till dry. Finally, add chilly powder, pepper powder, cumin powder, garam masala, and grated coconut and stir fry for two minutes. Serve with rice.
