Fish Fried Rice

This is a delicious and easy  fried rice made with fish. It is a healthy and quick lunch box fix. This is inspired by a Thai fish rice which I read in a magazine. The original recipe makes use of salted fish and chicken to make fried rice. But here I have used only fish (unsalted). The first time I tried this recipe I used stir fry method to cook fish and the result was somewhat scrambled fish. So to avoid it I  marinated the fish and fried it before combining with rice. You can also add carrots, cabbage, bok choy or any veggies of your choice.

Ingredients
Fish Boneless- 3/4 lb
(I used King Fish)
Cooked Rice- 3 cups
Onion - 1 medium
Spring onions - a little
Capsicum - 1 cup
Celery- 1/2 cup
Soya sauce- 2 tsp
Fish sauce- a few drops(optional)
Chilly sauce- 1 tsp
Oyster sauce- 1/2 tsp ( optional)
Carrot- 1 small
Ginger- 1inch thick
Garlic- 3-4
pepper powder- 1/2  tsp
corn starch- 1 tsp
oil

Cut fish into small pieces. Marinate it for 10 minutes with soya sauce and half tsp of pepper powder.Just before frying add in corn starch and toss and fry fish till done. Keep this aside.
In the same oil add garlic and ginger and fry for a minute.Next add onion and continue stir fry followed by chopped celery, spring onion, capsicum and carrots. When the vegetables are almost done add in all the sauces and fried fish and stir fry for a few seconds. Now add cooked rice and stir and mix well. Fish fried rice is ready.

Try this..
Hope you will all enjoy..

Sadhya Inji Curry/Ginger Curry

Inji Curry/Ginger pickle Inji curry is a sweet and sour curry made with ginger. It is an old fashioned recipe still made and served in Kerala homes on all special occassions. It has a distinctive flavor and taste of its own. It is hard to describe the taste of ginger curry. You need to taste it by yourself. It has a taste that lingers in your memory. Imagine spicy and tangy curry with a touch of sweetness and loaded with the flavor of roasted ginger. This dish is irresistibly appetizing. Inji curry is an important thodu curry in Kerala sadhya. Paneer Bhurji

Paneer Bhurji  Paneer Bhurji is easy to make, flavorful  and delicious side dish for rotis/chapatis. Paneer(Indian style cottage cheese) is now becoming part of my regular grocery list. Back in Kerala we never tried cooking with paneer. My parents love spicy food and so mom never experimented cooking mild gravy dishes with paneer. The only place you get a chance to try paneer dishes is at restaurants. Now I am buying paneer regularly and hunting new recipes to try.  Paneer burji is the easiest of all and perfect for beginners. It is made with scrambled paneer, tomatoes and flavorful spices. Healthy and protein packed this is also  the  easiest stuffing for chapati wraps. I tried this for my kids lunch box and it was a success. Ingredients Crumbled Paneer- 2 cup Onion- 1 medium Tomato- 1 medium Green chilly chopped-2 Ginger garlic paste- 1/2 tsp Turmeric powder- 1/4 tsp Chilly powder- 1/2 tsp Cumin seeds- 1/4 tsp Garam Masala- 1/4 tsp Cha...

Fruit custard is my favorite when it comes to easy no-fuss dessert. Fruit flavored custard is the perfect last-minute dessert idea for entertaining. The basic custard recipe is simple, and it is versatile- you can use it in a million ways, like pastry cream, cake filling, and tarts. But the simplest way to serve the luscious creamy custard is chilled with chopped fruits or jelly. Persimmon pudding has a delectable fruity flavor and a creamy gel like consistency. The pudding is a great time-saver, and you can make it ahead of time. Your guests will be impressed. I have already shared a baked Easy Persimmon Pudding .
