Beetroot Pickle - South Indian Pickled Vegetable Do you also like vegetable pickles?  I love pickles, and condiments are a staple in my kitchen. It is almost the end of summer, and I came across some beautiful beets at the farmer's market. Vegetable pickles are delightful and flavorful with vinegar, chilly, mustard, and garlic. Beetroot pickle is naturally bright with vibrant color and flavor. There is a natural sweetness with a slight crunch from the beets. Beetroot Egg Curry

Beetroot Egg Curry Egg curry is simple and easy to make for break fast or lunch.In Kerala egg curry is commonly served for breakfast along with appam or idiyappam. Recently I tried this beetroot egg curry,it is mildly spicy curry  and the caramelized onions and beetroot give  a touch of sweetness to the curry. Try this,you will surely love it. Ingredients Eggs- 4 Onions medium-3 Beetroot - 1 medium Green peas- 1 1/2 cup Tomato- 1 Curry leaves- a few Ginger thinly sliced- 2 tsp Kashmir chilly powder-2 tsp Fennel powder- 1/3 tsp Garam masala- 1/3 tsp Salt as needed Coconut oil Boil eggs and keep aside. Peel and grate beetroot. Heat oil in a pan and add sliced onion, ginger and curry leaves and salt . Saute till onion turns soft and caramelized. Beetroot Boli This is my second attempt on the traditional south Indian sweet Boli which is served as an accompaniment for payasam in south Kerala Sadhya, especially wedding feast. I already have the recipe for sweet boli , but this Vishu, I attempted a colorful twist to the regular boli. I made this beetroot boli and served along with payasam. Ingredients Bengal gram- 1 1/2 cups Sugar -1 1/2 cups Grated beetroot- 2 medium All purpose flour - 1 1/2 cups Pinch of salt+ 1 tsp sugar Gingerly oil 1/3 cup Nutmeg powder 1/3 tsp Cardamon powder - a pinch Rice flour- 3 tsp Ghee- 2 tbs   Cook Bengal gram ( kadala parippu) till it is soft and drain off the excess water. Grate beetroot and keep aside. In a heavy bottom pan heat ghee and add the grated beetroot and fry till the raw flavor disappears and the beetroot is cooked. Add the cooked kadala parippu and sugar. Beetroot Mushroom Cutlet Today's recipe is a quick and delicious snack/appetizer....the good old favorite, vegetable cutlet with a twist. Cutlets are everyone's favorite and you get it everywhere in India.My  family enjoys vegetable cutlet,just as much as the love meat cutlet. Beetroot mushroom cutlet is one of our favorites. It has the beautiful color and the earthy sweetness of beetroot,the mild meaty taste of mushrooms and  aromatic spices. It is delectable and I am sure even non-vegetarians will find this interesting. Beet Greens Dal

Beet Greens Dal  Beet leaves is nutritious wonder green that you can never discard. It is rich in protein,zinc,iron and magnesium and vitamins like A,C and K. I love it as a thoran along with beetroot or mixing and spicing up with lentils.I simply adore this dish because it is simple yet tasty and healthy and can be served over rice. Ingredients Toor Dal- 3/4 cup Tomato-2 medium Shallots- 4-5 Turmeric powder- 1/2 tsp Green chilly- 4-5 salt to taste Chopped Beet greens- 3 cups Oil-1 tsp Ghee- 1 tbs Thinly sliced ginger- 1 inch thick Mustard seeds- 1/3 tsp Cumin seeeds-1/2 tsp Fennel seeds- 1/2 tsp (optional) Garlic-3 pods Dry red chilly-2 Wash and soak toor dal for about 3 hours. Pressure cook this along with tomatoes, shallots, green chilly,turmeric powder and chilly powder and salt. Cook this for ten minutes or three whistles.  Beetroot Kesari Beetroot- the humble root vegetable is gaining popularity as a new  superfood . It is packed with antioxidants, vitamins and essential minerals. I try incorporating beets or beet greens in my cooking at least once a week. Beets have a distinctive earthy flavor. It has a wonderful aroma and it tastes great. And best of all wonderful naturally bright color, so this dessert has no artificial colors.
