Blackened Tilapia Blackened tilapia is one of my quick go-to recipes. I make this all the time, especially when I want to serve a quick and healthy dinner for my family. For this recipe, I used the whole tilapia, but if you have frozen tilapia fillets, then it is easy to whip up a quick meal. Not more than 10 or 15 minutes and your meal is ready! Serve it with some roasted potatoes or some salad and you have a filling meal. Growing up tilapia was never my favorite, but recently I have fallen in love with this mild-flavored fish. It is soft and flaky and pairs well with any kind of bold spice rub. And the added benefit, is an inexpensive lean protein, especially if you are on a diet. Cajun Spiced Tilapia

Cajun Spiced Tilapia/Fish fry Quick and yummy fish fry with a flavorful blend of Cajun spices. The spice blend has a rich color and spicy . It goes well with salsa or roasted potatoes. You can use any fish of your choice. If you like breaded deep fried fish you can coat with flour or corn meal. Ingredients Fish-3 fillets Cayenne Pepper- 1 tsp Ground pepper- 1/4 tsp Sweet Hungarian pepper- 1/2 tsp Salt to taste Fennel seeds  ground- 1/2 tsp Dried thyme- 1/2 tsp Lemon zest- 1 tsp Lemon juice- 1 tsp Garlic paste- 1 tsp Place fish on a dish and coat both sides with olive oil. Mix the garlic paste and lemon zest with the the spice rub and spread evenly on both sides and allow to marinate for 10 minutes. Shallow fry the fish 2 minutes on both sides till evenly brown and and crispy in the edges. Drizzle lemon juice before serving. Try this Hope you will all enjoy!

Cajun Chicken Jambalaya

Cajun Chicken Jambalaya Today's dish is a one pot meal, a Spanish inspired chicken and sausage Jambalaya. This is Cajun style jambalaya and is a versatile main course dish.I used Cajun sausage and spice mix which imparts a smoky flavor. You can also add shrimp to this dish. Try this,you will surely love it. Ingredients Chicken- 1 lb Rice- 2 cup (Use long grain rice or basmathi rice) Onion- 1 large Tomatoes- 2 medium ( or half can diced tomatoes) Garlic- 2-3 cloves Green bell pepper- 1  medium Celery chopped- 1/3 cup Jalapeno pepper- 1 Bay leaf-2 Tomato paste- 1 tbs Cajun sausage- 8 ounce Cajun spice-3/4 tsp Cayenne pepper- 1/2 tsp Pepper- a pinch  salt to taste Heat olive oil in a pan and add bay leaf.
