Coconut Halwa Coconut halwa is flavorful and yummy sweet. This halwa is made with coconut milk and grated coconut. The bakery near our home in Kerala sells this version of coconut halwa and it was my favorite.You can also lightly toast the coconut. It will improve flavor and give a slight crunch and texture to the halwa. Halwa is very popular in Kerala and you get the best banana halwa is Kozhikode, a city in North Kerala. Kadala Pradhaman/Kadalaparippu Pradhaman Kadala parippu or channa dal payasam is a traditional payasam made on special occasions like Onam and Vishu . This payasam is also an integral part of Kerala wedding feast.I made this payasam for Vishu sadhya. Parippu payasam sounds simple but believe me, it looks and taste exotic with an enticing flavor. Kadala parippu is cooked in coconut milk and jaggery and flavored with cardamom,roasted cumin, dry ginger powder and ghee.If you like you can also add chowari/cooked tapioca pearls. Fruits Varattiyathu Todays recipe is fruits varattiyathu/ fruit preserve  made in traditional Kerala style. Chakka varatti/jack fruit preserve is a popular in  Kerala which is made with fully ripe jack fruit bulbs. Along with chakka/jack fruit I have used pineapple, ripe plantain and ripe mango to make this fruits varattiyathu. It can be used as a jam or it can be served as halwa/dessert. You can also use this to make payasam, ila ada and steamed dumplings. Try this,you will surely love it Ingredients Ripe Jack fruit chopped- 15-18 bulbs Pineapple chopped- 1 cup Ripe plantain- 1 Mango medium sized- 1 Jaggery powdered- 2 1/2 cup Ghee- 1/3 cup Cardamon powder- 1 tsp Dry ginger powder- 1/2 tsp De-seed jack fruit bulbs and cut into small pieces. Vishu Kanji Happy Vishu to all my friends and readers! Today I am sharing a Vishu special recipe popular in central Kerala.  It is a sweet rice and bean porridge/ dessert served as breakfast on Vishu /Kerala New Year. This recipe is shared by my mother-in law. Thanks ammachi for this recipe.It is a yummy porridge and definitely worth a try. Ingredients Rose matta rice- 1 cup Vanpayar/ red cow peas- 1/2 cup Jaggery- 1/2 cup (powdered) Coconut milk thin- 2 cup Coconut milk thick- 1 cup Ghee- 1 tbs Sliced coconut- 2 tbs cashew nuts a few Sesame seeds- 1 tsp Cook vanpayar till soft and keep aside. Add half cup of water into jaggery and make a syrup. Strain impurities and keep aside. In a heavy bottom pan add washed rice and thin coconut milk and a pinch of salt. Chakka Pradhaman/Jack fruit Payasam Chakka Pradhaman is a tasty dessert with ripe jack fruit.Chakka pradhaman can be made fresh jack fruit when they are in season. But it can be enjoyed all year round by using chakka varatti or jack fruit preserve. Pradhaman is part of Kerala Sadhya menu. Give this recipe a try,you will surely love it. Ingredients Chakka Varatti - 1 1/2 cup Thick coconut milk- 1 cup Thin coconut milk- 2 cup Jaggery - powdered - 1/2 cup ( according to sweetness you like) Ghee- 2 tsp Dry ginger powder- 1/8 tsp Cardamon crushed- 4-5 Raisins and cashew nuts- a few Sliced coconut-  a few Add one cup of water to jaggery and bring it to a boil. Strain the impurities and pour the warm syrup over the chakka varatti/jack fruit preserve. The chakka varatti will be thick, allow it to sit for half an hour. Aval Sharkara Payasam

Aval Sharkara Payasam Aval Sharkara payasam is quick and simple payasam/pudding. It is made with rice flakes/beaten rice and jaggery and coconut milk. Earlier I posted aval milk payasam.This is yet another yummy version. Give this recipe a try,you will surely love it. Ingredients Aval (Beaten red rice)- 1 1/2cup Jaggery ( powdered)-250 grams (Adjust according to sweetness you prefer) Coconut milk thick- 1 1/2 cup Coconut milk thin- 2 cup Cardamon crushed- 5-6 Raisins and cashew nuts- a few Ghee- 3 tsp Place aval in a strainer and rinse under running water, strain and keep aside. Add jaggery in a heavy bottom pan, add 1 1/2 cup of water  and bring to a boil.Strain the impurities and bring it back to boil. Allow this to reduce and become a thick syrup. In a separate pan heat ghee in a pan and roast the aval/rice flakes till it becomes crisp. Paal payasam/Palpayasam Happy Onam to all my friends and readers! Wish you all a very happy and prosperous Onam!!! Onam is finally here and no celebration is complete without a sweet dessert. I am sure no Malayali can think of a sadhya without a payasam. Pal payasam is definitely a star,my all time favorite :) This is a rich delicious payasam where the rice is cooked in milk till it attains a creamy texture. The milk gets reduced and the flavor and taste is very much  like palkova. It has very little ingredients, but it is time consuming and  needs a little patience to prepare this dessert. Here I have used basmathi rice but it is best if we use payasam ari (rice) or rose matta rice.Try this you will surely love it.
