Kilikoodu/Malabar Snack

Kilikoodu/Malabar Snack Kilikoodu is a Malabar snack made with chicken and quail eggs and coated with vermicelli.It is a deep fried crispy snack that can be served along with tea.The vermicelli gives it an extra crunch. The name kilikoodu means birds nest. If you do not have quail eggs you can use regular eggs cut into quarters. Try this,you will surely love it. Ingredients Chicken cooked- 1 cup Potato medium-2 Quail egg- 6-8 Onion- 1 medium Ginger Garlic paste- 1  tsp Turmeric powder- 1/2 tsp White pepper powder- 1/2 tsp Chilly powder- 1/3 tsp Garam masala- 3/4 tsp Chopped Coriander leaves- a little Lemon juice- 1/2 lemon salt to taste Vermicelli- 1/2 cup Egg-1 Oil for frying Cook chicken along with salt and turmeric powder and when it cools down, mince in a food processor. Unni Madhuram/ Sweet Banana Balls Unni madhuram is a sweet snack made with left over bread and ripe plantains. There are several recipes for deep fried banana balls and my personal favorite is undan pori, a popular tea stall snack.I am  loving unni mathuram because of its simplicity and taste .Both these snack are crispy and sweet and made with bananas. Unni mathuram is a Malabar snack. It is extra crunchy in the outside with a sweet spongy center.It is a quick fix snack and kids will love this tea time snack. Ingredients Ripe plantains-2 Banana/cheru pazham-2 (optional) Bread sliced- 6 Cardamom powder-  1/2 tsp Sugar- 3-4 tbs Salt- a pinch Cashew nuts -5-6 Ghee- 1 tsp Oil for frying Use dry left over bread for this recipe. You can sun dry it or lightly toast it in the oven. Cut bread into bits and add to a food processor. Pulse a few times. You will get course crumbs. Apple Kums/Pola Kums is an innovative dish from the Malabar region if Kerala.  It is a popular Iftar snack, made during the Ramadan month.  If you love tea time snacks here is a quick and no fuss snack made with eggs and apples, which you will surely enjoy. Kids will love this sweet delicacy.   Apple Kums  looks like a cake, but has a pudding like texture,moist and tender. It is an egg based dessert and is slow cooked on stove top. The custard is allowed to cook and set till it is firm and can be sliced. You can make it with egg as the key ingredient or flavor with fruits. It has the right amount of sweetness to satisfy sweet cravings and the flavor of apples. Masala Bun/Bun Nirachathu Today's recipe is stuffed bun with a spicy chicken masala filling. It is inspired from the Malabar snack bun nirachathu. In this recipe I used regular yeast bread dough and stuffed with the filling and baked like regular bun. You can also make an easy version of this recipe by using store brought bun. I will add the recipe below. You can be creative with the filling, it can be either sweet or spicy filling.Kids will love this stuffed bun and it is a yummy and filling snack. Undaputtu- Rice Dumpling with Prawns- Malabar Snack Today's recipe is Unda puttu, a north Kerala seafood delicacy. People of Kerala love their seafood, and rice and fish is a staple everyday meal. But will you be surprised if I say that they can even snack on seafood delicacies? This recipe is a classic example. It is a steamed rice dumpling with spicy prawns filling. This is a snack from Malabar region of Kerala and is easy to make and very appetizing. It is a popular Iftar recipe and is made during the fasting months. Pazham Nirachathu

Pazham Nirachathu Pazham Nirachathu is a yummy snack from North Kerala. It is whole plantains stuffed with a sweet coconut filling, dipped in batter and fried. It is similar to pazham pori and kids will surely love this. Ingredients Whole plantains-2 All purpose flour/maida- 1/2 cup Rice flour- 2 tbs salt- a pinch Sugar- 1 tbs For the filling Coconut- 1/3 cup Sugar- 3 tbs Ghee- 1 tsp Cardamon- 1/3 tsp Raisins- a few Chopped cashew nuts- 4-5 ( I also used 1 tsp dates and 1 tsp candied pineapple) Heat ghee in a pan and roast cashew nuts and raisins till golden brown. Add coconut and sugar and stir for a minute and set aside. Allow this mixture to cool. Make a medium consistency batter with maida,rice flour, salt and sugar and water. Keep aside.
