Zucchini and Mushroom Chicken Today's recipe is a copycat Panda Express style zucchini and mushroom chicken. It tastes almost like your favorite take out meal. Now, my friends, I am not claiming this is the exact spot on a recipe, but it tastes delicious and is your ticket to a tasty weekend meal in a jiffy. Your family will love this every time you make. My long time favorite had been Panda express Beijing beef, but sometimes I find it too sweet. This one is my recent favorite, simple and unassuming, with a balanced taste and a subtle peppery heat. The sauce is a light ginger-flavored sauce and it tastes delicious with steamed rice- delightfully crispy and delicious chicken bites with sauteed zucchini and mushrooms. Orange Sesame Chicken and Noodles Orange chicken is an absolute comfort in my house. My kid love this crispy,sticky and mildly sweet chicken. This is a slight different version of orange chicken that I posted earlier in this blog. I served this with noodles,but you can also pair with steamed rice or fried rice.This is a super easy weekend meal, that is filling and tasty. Ingredients Chicken boneless- 1 lb Eggs-1 Corn starch- 4 tbs All purpose flour- 1 tbs Baking powder- - a pinch Ice cold water- 1/4 cup Pepper powder- 1/2 tsp Salt a pinch For the sauce Orange juice- 3/4 cup Garlic- 3 cloves Ginger chopped- 1 tsp Brown sugar or molasses- 2 tbs Soya sauce-3 tsp Pepper powder-1/4 tsp Sesame oil- 1 tbs Sesame seeds-11/2 tsp Rice vinegar- 1 tsp Chicken stock- 1/3 cup Corn starch- 1 tsp For the Noodles Noodles- 8 oz. Chicken Spring Rolls Spring rolls needs no special introduction. This is my kids favorite, so I make them often as a snack. Chinese Style spring rolls are traditional festival food. Pastry sheets with meat and vegetable filling, is rolled into cylinders and deep fried  to from a crispy and tasty appetizer. You can also try other vegetables like Napa cabbage, mushrooms, bean sprouts or tofu.  Ingredients Chicken- 1/2 pound Ginger and garlic minced- 1 tbs Soya sauce- 1 tsp Oyster sauce-1/2 tsp Dry chilly flakes-1/3 tsp optional Black pepper- 1/2 tsp Salt to taste Sugar- 1/2 tsp Cabbage shredded- 1 cup Carrot grated- 1/2 cup Spring onion stalks- thinly sliced Spring roll wraps- 20 defrosted oil for deep frying- 1 1/2 cup To make the filling Heat a pan/ wok and add oil. Teriyaki Mushrooms and Chicken Stir fried mushroom and chicken with teriyaki sauce makes a quick and simple meal. This is an easy stove top chicken teriyaki. You can use the sauce to grill or bake the chicken.Grilling enhances the flavor of this savory sweet sauce by giving a caramelized coating to the chicken. The quick stir fry method also tastes delicious. I tried the home made teriyaki sauce from Swathi's blog . She made with tofu,I used chicken and mushrooms instead. Orange Chicken Orange chicken is famous in Chinese restaurants and take out. This is a home made version. It is crispy chicken coated with a sticky citrus flavored sauce. This chicken dish is sweet and tangy with the right amount of heat from chilly garlic sauce. You can substitute chilly garlic sauce with fresh ground chilly or chilly flakes. Ingredients Chicken boneless- 1 1/2 lb Eggs- 2 Corn starch- 4 tbs All purpose flour- 1 tbs Pepper powder- 1/2 tsp Grated ginger- 1/2 tsp Salt a pinch For the sauce Garlic- 3 cloves Spring onion chopped- a hand full Orange juice- 1/3 cup Orange marmalade- 1 tsp (or zest of one orange) Honey- 2 tbs Soya sauce- 2 tsp Chilly garlic sauce- 1 tsp ( I used the Lee Kum Kee brand) Chicken stock- 1/3 cup Sugar-a pinch Rice vinegar- 2 tsp Corn starch- 1 tsp Cut chicken into small bite size pieces.
