Pineapple Muffins



Pineapple Muffins has a great flavor and is loved especially by kids. Muffins has always been easy on the go snack and also a quick breakfast . I think muffins also helps us experiment and is good for a beginner bakers like me. This was a tasty treat inspired by the pineapple upside down cake and my family enjoyed. I enjoyed it as a tea time snack rather than as a breakfast.

Ingredients
All purpose flour- 2 cups
Pineapple- 1 cup ( chopped)
Eggs- 2
Sugar - 1/2 cup
Baking powder- 1 tsp
Baking soda- 1/2 tsp
Sour cream-1/4 cup
Butter- 2 tsp
Brown sugar- 3 tsp
Pine apple juice- 1/2 cup
Orange zest- 1 tsp
Salt- a pinch
Nutmeg- a dash.




Preheat oven to 350 degree F, grese muffin tray or line up paper cups and set asie.
Mix flour, sugar, baking powder, soda, and salt together and keep aside.
In a mixing bowl add melted butter and sugar and combine well. Mix well using a hand mixer or an electric one. Add eggs one at a time and beat well after each addition. Pour this into the dry mixture and incorporate it gently along with sour cream and pineapple juice and orange zest ( mine was a thicker batter consistency and could be scooped out)
Line up muffin baking tray with paper cups and pour this mixture. Fill only half cup.
Mix in brown sugar, pineapple and nutmeg and spoon in as much as you like into the cups( mix with sugar and put it in only last minute or it will become watery) Put in oven 350 degree F for about 10 minutes or till the muffins are lightly browned up.

Green Beans Stir fry  Simple and quick Asian style green beans stir fry with the flavor of garlic, bell pepper and roasted sesame seeds and the crunch of  peanuts.It is  delicious and flavorful dish and the little spiciness comes form chilly sauce and chilly flakes.Goes well with fried rice or any Asian style dinner. Ingredients Green beans chopped- 2 cup Roasted peanuts- 1/4 cup Roasted Sesame seeds- 2 tsp Garlic- 3 cloves Onion- 1 medium Soya sauce- 1 tbs Sugar- 1/3 tsp Chilly garlic sauce- 1 tbs Chilly flakes- 1/3 tsp Corn starch- 1 tsp(optional) Cut beans into desired size. Put it in microwave in high for one minute. Heat oil in a pan and add chopped garlic and saute for a few seconds and add the green beans,onions and sprinkle chilly flakes and a dash of salt. Dilkhush- Baking partners challenge#8(Tangzhong Method) Baking partners challenge#8 is learning a new method of bread making. I always wished to learn bread baking at home and I thoroughly enjoyed this months challenge. There were two method of bread making, for this months challenge-one is Asian method Tangzhong and other is Scandinavian method of Scald flour.
