Papaya Coconut Cake


 Papaya coconut cake is a delicious, moist and buttery cake and the inspiration is from the  by the Bahamian papaya cake.Usually a little of rum is added for extra flavor in these cakes.This cake can be better known as a papaya sauce cake as I cooked the papaya into a chunky sauce before adding to the cake. You can also add the puree or just chopped papaya, but cooked papaya reduces the water content and gives it a sweet caramelized flavor which you will surely enjoy. Here are the ingredients.



Ingredients
All purpose flour- 2 cups
Baking powder- 1 1/2 tsp
Baking soda- a pinch
salt 1/3 tsp


Papaya sauce-1 cup
( I used an orange red papaya for this recipe)
coconut- 1/2 cup
Sugar- 3/4 cup
brown sugar- 1/3 cup
( Adjust sugar according to the sweetness of the papaya)
butter- 1/2 cup
egg - 2
candied ginger- one tsp ( optional)
Vanilla essence- 2 tsp
Imitation Rum Extract- 1 tsp ( Optional)
( I used McCormick Imitation Rum Extract or you can add 1/3 cup rum )

orange zest- 1 tsp
sour cream- 1/2 cup


( you can also add nuts and raisins)


To make the papaya sauce heat one tsp of butter and brown sugar in a sauce pan.When it gets caramelized add the papaya and cook  till all the water gets evaporated and almost dry. Allow this to cool completely.
Sieve in all flour, baking powder,soda, and salt. mix nutmeg or candied ginger,coconut  salt and keep aside.
Preheat oven to 350 degree F. Prepare cake pan by greasing with butter and dusting with flour and set aside.
Beat room temperature butter and sugar till light and fluffy. Add in eggs one at a time and beat till fluffy. Mix in vanilla essence, orange zest and sour cream. Now add little by little the dry mixture and spoon in the papaya sauce alternatively and gently fold in. Pour into the pan and bake for 20 minutes or till the tooth pick inserted in the middle comes out clean.
For the icing Combine two tsp of butter and one cup of icing sugar using an electric mixer in low speed. Add two tsp of milk and 1/2 tsp of vanilla essence and  a  few drops of imitation rum and beat till smooth and creamy. Spread on the cake when it is completely cool. I have used nuts and coconut for decorating the cake.

    @ Jaya..I used a ripe sweet papaya...I chopped it into small pieces and added into caramelized brown sugar. Allow its moister to evaporate and it will attain a chunky sauce like consistency.

  35. this recipe means a lot to me!! i'm passionate abt cakes and desserts and may change my blog to one like tht exclusively some years later.

    i've this papaya here and i'll choose half the quantity as i'm so sceptical...or you think it's worth trying for 2 cups maida. i'm from kerala too so tastes may be similar :P

    I used a medium papaya and the final sauce was about one and one half cup and I used only one cup for this recipe( rest I used for another recipe).The sauce I made was somewhat nearing a jelly consistency with very little moister( if you are familiar with Kerala Varattu).Adjust sugar according to the sweetness of your papaya.

  40. i made it! all loved it. couldn believe it was hey, papaya. passing it on to mom. the recipe mentions candied ginger and the method mentions nutmeg powder?? i used a little of both. i had both. substituted 1/3 cup brown sugar with milkmaid and the rum extract with brandy. came out very well. thanks once more!!

    Thanks for pointing out,actually I used both and some may feel its a whole lots of flavors, but I love nutmeg and ginger flavors in my cake.The first time I tried was in my pineapple cake :)
    Great to know that you used brandy,The orginal recipe uses rum or brandy and I had only the extract, so I tried with that..Milkmaid must have made it more flavorful..will surely try that next time,thanks for sharing...do visit often :)

Mathanga Parippu Curry/Pumpkin Dal Curry

Mathanga Parippu Curry  This is a basic home style lentil curry with pumpkin and moong dal. This is a coconut based curry and goes well with rice. It is similar to the nadan parippu curry. Pumpkin added to lentil brings in extra flavor and a little sweetness which is pleasing to the palate. Ingredients Pumpkin/Butternut squash cubed - 2 cup Moong dal- 1/2 cup Coconut grated 3/4 cup Turmeric- 1/3 tsp Green chilly- 4 Cumin- 1/2 tsp Fennel- 1/3 tsp Turmeric powder 1/3 tsp Garlic - 2 Mustard seeds 1/2 tsp Shallot- 2 diced Dry Red chilly- 2 Oil - 2 tsp Curry leaves Dry roast the moong dal till it gets a nice aroma but it should not be browned up. Allow to cools down a bit. Pour two cups of water and pressure cook till soft ( three whistles) Chop pumpkin into cubes. Add this into the cooked dal with half cup of water and salt to taste and cook till pumpkin becomes soft and tender. Meanwhile grind the coconut, cumin and fennel into a fine paste....
