Strawberry Crepes

Crepes are classic French thin pancake that needs no introduction. It can be served as a dessert or as a special breakfast. Crepes are simple to make with basic ingredients like eggs and flour. Do you like crepes for breakfast or as a dessert?  Today's recipe is my kid's favorite is fresh cream and strawberry. My favorite is sweetened coconut and caramelized banana. Crepes have always been a fun breakfast option at home, and I have been ceremoniously making these on Sundays as a special treat for my family. Crepes are thin and light pancakes and there is a variety of filling, either sweet or savory. There are endless options when it comes to filling both sweet and savory. Try the savory crepes as a quick dinner option. You can use eggs, cheese, meat filling or mushroom to make a tasty savory crepe.

Crepes are easy to make and you can whip it up in minutes. I found the easiest way to make crepes is to put all in a blender and blend for a minute or two. Crepe batter is the base for several recipes from fancy crepe cakes called Mille Crepes, Crepe Suzette or the crispy crepe dentelle to basic breakfast crepes. How to make the perfect crepe?
Crepes are buttery, delicate and thin. Crepes are simple to make with basic ingredients like flour eggs, milk and a touch of sweetness. The best flour to use is all-purpose flour, but you can also use rice flour or almond flour. Crepes do not use baking soda or baking powder like pancakes. 

The ideal crepe batter should be runny thin batter, so do not worry about the consistency of the batter. All you need is a smooth lump-free batter. You can whisk the batter or even easier use a stick blender or regular blender. Add all the ingredients and pulse for 10-15 times. For a smooth batter strain using a mesh strainer. Let it rest for half an hour before making the crepes

Ingredients
To make batter
All purpose flour- 1 cup
Eggs 2
Milk- 1 cup
Water- 1/2 cup
Sugar- 2 tsp
Salt- a pinch
Cooking oil/butter- 1 tbs
Vanilla essence- 1 tsp

For the filling
Sliced Strawberries- 2 cup
Sugar- 4 tbs
Lemon zest- 1/2 tsp
Whipped cream- 1 cup

Beat eggs till it is light and fluffy. Mix all the ingredients listed under 'to make batter ' and using a blender mix into a thin batter without lumps. Keep this aside for half an hour. Alternatively, you can add all ingredients into a blender. Blend for one or two minutes. Strain the batter for a smooth consistency and allow to rest for half an hour

Slice strawberries and mix with sugar and lemon zest and keep it aside.

Heat a frying pan and lightly grease with butter. Keep in medium flame. Pour about 3-4 tbs of the batter in the center and gently swirl around in clockwise direction so that the batter spreads all over the pan. After 30-40 seconds gently flip over the crepe and allow the other side to cook as well. Remove the crepe into a platter. Continue the same process to make more crepes.

Place crepes flat spread a layer of whipped cream either in the center or towards one half and spoon in strawberries along with the syrup on top. Fold crepe. Drizzle with chocolate, caramel or powdered sugar and serve immediately.

Undan Pori

Undan Pori Today's post is a delicious snack usually common in small restaurants and tea stalls of Kerala.It resembles very much to the unni appam yet it is different in its taste and texture. Undan pori  is crispy and crunchy and at the same time soft and spongy inside. This snack was regularly seen in our college canteen. But this humble snack was brought it only if there was a shortage of uzhunnu vada and parippu vada. It sounds funny but being away from Kerala I felt a craving for this snack and tried it once, but I did not get the perfect chayakada/teastall taste.
