Pineapple pickle is a delicious pickle, fresh and bursting with tropical flavors. Pineapple pickle has a sweet and savory combination and adds a zesty kick to any meal. Do you like sweet and spicy pickles?. I love pickled, salted, and fermented vegetables and fruits. It is easy-to-make condiments and a must-have in my kitchen. My family favorites are sweet and savory pineapple chutney and spiced pineapple in salted brine. Salted pineapples are good on sandwiches, fish tacos, or roasted meat. The best part of this pickle is that you can use it just like chutney or salted pineapple. The pickle is for those who love to take the spice level a notch higher. Pineapple pickle is a tongue-tingling sweet, tangy, mildly spiced pickle. It is delicious, and the flavor and taste are irresistible. It can be paired practically with everything, but it is best with parathas and naan.
This recipe is from my mother-in-law. Sweet and sour pickles are much adored in my home, and this pickle recipe was a hit among family and friends. To choose the best ripe pineapple, look for pineapple with skin golden in color with fresh-looking leaves. It is ok to have a few green spots. It should have a sweet scent when you sniff. Select pineapple that is ripe and firm but not too sweet and juicy. Kashmiri red chilly powder adds heat and the slight tart from vinegar. If you wish to retain the color of pineapples, you can use crushed dry red chili or green chili instead of chili powder.
How long can you store this pickle?
This pickle does not have a long shelf life. It can be stored in an airtight container, for up to two weeks at room temperature. The pickle stays fresh in the refrigerator for one month. Just like any pickle, let it for a couple of days for the flavors to meld and mature. We like to have it with steamed rice or parathas. Spice up your meal with this yummy pickle. Spiced Pineapple Pickle- Kerala Pineapple Achar
Ingredients
Pineapple chopped- 3 cupsGarlic- 6-8 cloves
Green Chilly- 3-4
Curry leaves a few
Mustard- 1/2 tsp
Chilly powder- 2 tsp
(adjust according to your taste)
Fenugreek powder- 1/2 tsp
Asofetida-1/3 tsp
Salt to taste
Sugar- 2 tsp
Vinegar- 3 tbs
Oil- 3 tbs
Cut pineapple into small cubes. Mix with sugar and salt and set aside for one hour.
Strain out the liquid into a separate bowl. Pour this into a saucepan, bring this to a boil and add vinegar. Switch off the flame and allow this to cool.
Heat oil in a pan ( 3-4 tbs) and add mustard seeds, and when they splutter, add sliced garlic, curry leaves, and green chilly and saute till the raw flavor disappears. Switch off the flame, and add chilly powder, fenugreek powder, and asafoetida. Turn back the heat and mix the chopped pineapple. Saute in low flame for 2-3 minutes. Add the pineapple juice and vinegar mixture and switch off the flame. When it cools down transfer into an air-tight jar. You can store this in an air-tight container, for up to two weeks at room temperature. Pickle stays fresh in the refrigerator for one month.
