Golden Egg Curry/Burmese Sour Duck Egg Curry Golden egg curry is a Burmese recipe. Fried eggs is served along with a delicious spicy, sour, tomato curry sauce. The frying part is important as it gives it a beautiful golden crust. The recipe is adapted from here . Ingredients Duck eggs-4 Chopped onion- 2 medium Tomatoes- 3 Ginger garlic paste- 1 tsp Shrimp paste- 1 tsp (optional) Fish sauce- 1 tsp Tamarind pulp- 2 tsp Sugar- 1 tsp Turmeric powder- 1/3 tsp Chilly powder- 1 tsp Green chilly- 2 (or paprika according to spice tolerance) oil Salt to taste Cilantro for garnish Boil eggs and then transfer into cold water. Beetroot Egg Curry Egg curry is simple and easy to make for break fast or lunch.In Kerala egg curry is commonly served for breakfast along with appam or idiyappam. Recently I tried this beetroot egg curry,it is mildly spicy curry  and the caramelized onions and beetroot give  a touch of sweetness to the curry. Try this,you will surely love it. Ingredients Eggs- 4 Onions medium-3 Beetroot - 1 medium Green peas- 1 1/2 cup Tomato- 1 Curry leaves- a few Ginger thinly sliced- 2 tsp Kashmir chilly powder-2 tsp Fennel powder- 1/3 tsp Garam masala- 1/3 tsp Salt as needed Coconut oil Boil eggs and keep aside. Egg Fried Rice Egg fried rice is simple and quick meal with egg and left over rice. Egg fried rice is usually served as breakfast and is minimal yet tasty and filling. Try this you will surely love it. Ingredients Cooked rice- 2 cup Egg-3 Minced garlic- 1 tsp Spring onions- 1/2 cup chopped Crushed chilly- 1/8 tsp (optional) Soya sauce- 1 tsp Pepper and salt to taste Sesame oil- 1 tbs In a pan add few drops of oil and add one beaten egg. Quickly scramble it and stir fry for a minute till it gets dry. Add pinch of salt and pepper and set this aside. This step is optional, this can be used later to garnish along with chopped spring onions. In the same pan add oil. When hot add the crushed red chilly flakes and minced garlic. You can also mash the eggs to attain a chunky texture. There are also a variety of ingredients that you can use for this salad like sauteed shallots, sauteed mushrooms, bell pepper, chopped nuts etc. Ingredients Hard boiled eggs- 3 Tomato-1 Salad Cucumber- 1 small Shallots- 4-5 Ground black pepper- 1/3 tsp Paprika-a pinch salt to taste Oil - 2 tsp Fresh parsley or dill- 1to 2 tsp Lemon juice- a few drops Lettuce and black olives for garnish  In a pan saute shallots till golden brown. Egg Curry/Nadan Mutta Curry  A classical Kerala breakfast of appam/idiyappam and mutta curry/egg curry is irresistible and filling too. I love this egg curry,it is simple and a perfect accompaniment with rice and chapathi too. The creamy gravy of this curry comes from a generous use of thick coconut milk. This curry can be made mildly spicy,if you do not like a spicy dish for breakfast. Ingredients Eggs- 5 hard boiled Onions thinly sliced-3 medium Tomatoes-2 Ginger garlic paste- 2 tsp Curry leaves - a few Thick coconut milk- 1 cup Thin coconut milk- 1 1/2 cup Fennel powder- 1/2 tsp Turmeric powder- 1/3 tsp Chilly powder- 3/4 to 1 tsp Pepper powder- 1/8 tsp Coriander powder- 1 1/2 tsp Cinnamon stick - 2 peices Clove- 3 Boil egg for three minutes and set aside. Sweet Breakfast Omelet Sweet omelet adds an interesting twist to your regular breakfast omelet and is quite filling on its own. The first time I read about sweet omelet was the Persian sweet omelet with dates. Later I found interesting versions with different fillings like chocolate chip, jam filled sweet omelet and  poached fruit omelet.
