Sweet Mango Chutney

Sweet Mango Chutney Sweet and spicy mango chutney is  a classic Indian condiment that can be served with flat bread or any spicy dish.It is a aromatic relish made with sweet mangoes. Use mangoes which are just ripe, firm and not yet soft. This can be preserved in air tight jars for several day. Try this,you will surely love it. Ingredients Mangoes- 3 large (firm and just ripe mangoes) Sugar-1 cup Salt- 1 tbs Ginger- 2 inch piece Garlic- 3 cloves Vinegar- 1 1/2 cup Chilly powder- 2 tsp Chilly flakes- 1/4 tsp Mustard seed- 1 tsp Cloves- 3-4 Make a paste of ginger, garlic and mustard seeds. Use 2 - 3 tsp of vinegar to make this paste. In a heavy bottom pan add sugar and vinegar and simmer for 5-6 minutes till the sugar melts. Add the ground paste and simmer for another 3-4 minutes before adding the rest of the ingredients. Apricot Mango Juice Chilled mango apricot juice is fresh flavored and refreshing summer drink. Since it is season we are getting lots of fresh mango and apricot in the market. Mangoes and apricot goes well together with the creamy sweetness of mango and the musky sweet and tart taste of apricot.Apricot like mango is a healthy fruit with fiber and beta-carotene Try this,you will surely love it. Ingredients Ripe mango- 2 medium Apricot-3 Sugar- 1 tbs Lemon juice- 1/2 chilled ice water In a blender/food processor add peeled and chopped mangoes. Take off the kernel of apricot,roughly chop and add to the blender. Add sugar,lemon juice and ice chilled water or a few ice cubes  and pulse till nice and smooth. Serve chilled. Manga Achar/ Mango Pickle Green mango pickle is a delicious and spicy condiment. We rarely get raw mangoes here and few weeks back , I was so glad to come across raw mangoes in our grocery store. I have already shared pickle recipes with mango like Kerala kadumanga/mango pickle and Andhra mango pickle/ aavakaya. Vellarikka Manga Curry/Cucumber Mango Curry Today's recipe is a common curry for lunch in Kerala and reminds you of its regional flavor and taste. Mango Sago Pudding/Mango Tapioca Pearls Pudding Since it is mango season we are getting lots of mangoes here. I wanted to try this pudding for quite some time now. It is a humble yet tasty pudding with mangoes and sago/tapioca pearls. Try this you will surely love it Ingredients Sago/Tapioca pearls- 1 cup Ripe Mango- 3 Condensed milk- 1/2 cup Milk-1 cup Sugar- 2-3 tbs Cardamom powder-  1/2 tsp Rose water- a few drops (optional) In a deep heavy bottom pan bring 7-8 cups of water to a boil. Add the sago pearls and gently mix. Leave this to cook in medium flame for 10 minutes. If the water thicken drain out and add more warm water and cook. When the sago pearls are cooked and looks transparent, drain . Transfer the cooked sago pearls into a  bowl of cold water and set aside. Make a puree of diced mangoes, milk, condensed milk and sugar. Prawns/Chemmeen Manga Peera   Chemmeen Manga peera is very similar to meen pattichathu made with small fish like anchovies, sardine etc.This  is a traditional recipe of Kerala where fish or prawns is cooked along with grated coconut . The difference in this recipe is that instead of  Kudampuli or tamarind  as a souring agent, raw mango is used. Pineapple Manga Perukku Pineapple and mango perukku is a quick and easy side dish for rice. It can be served in Sadhya too. This is more like a salad and does not involve any cooking.Try this,you will surely love it.  Ingredients Chopped pineapple- 3/4 cup Chopped green mango- 3/4 cup Yogurt- 1 cup Grated coconut- 1/3 cup Mustard seeds- 1/4 tsp Cumin seeds- a pinch Green chilly-2 Sliced ginger- 1/2 tsp salt to taste For tempering Mustard seeds- 1/4 tsp Dry red chilly-2 Curry leaves- a few Chop pineapple and mango into small pieces. Make a fine paste or coconut, cumin and 1/4 tsp of mustard seeds. Add this to the chopped pineapple and mango and mix in the yogurt,green chilly and salt. Set this aside. Heat oil in a pan and add mustard seeds. When it splutter add chopped dry red chilly and curry leaves. When it changes color, take off from the flame and pour over the salad. Mix well and serve. Mango Curry/Manga Thodu Curry Recipes with raw and ripe mangoes are integral part of Kerala cuisine.Manga thodu curry/mango curry is a easy side dish for rice. This is a central Kerala style thodu curry/side dish for Sadhya. I got this recipe from my mother-in law and she calls this as Kadu Manga. It is different from the regular mango pickle and does not have shelf life like pickles. The mango used for this recipe is not sour and raw,but little sweet and slightly ripened. Paal Ada Mambazham Payasam Payasam is very popular dessert in Kerala and is made on every special occasions. This recipe is a tweak to the traditional paal ada pradhaman by adding mango puree. You can buy paalada from Indian grocery store,it is available in dehydrated form. Try this creamy and flavorful fruit payasam, you will surely love it Ingredients Palada - 100 grams Mango puree- 2 cups Milk-3 cups Condensed milk- 1 ( 14 ounce container)  Sugar- 2-3 tbs Cardamon powder- 1/2 tsp Cashew nuts and raisins for garnish. ghee- 2 tsp  Heat one tsp ghee in a pan and add mango puree. Vella Manga Curry Vella manga curry is side dish made with green mango and yogurt. It looks like a pachadi but  has a distant taste of kadumanga or mango pickle served for sadhya. I had a faint memory of  this sadhya dish which I tasted years back. At that time I thought that it was kadumanga achar mixed with some yogurt. Mambazha Kalan Kalan is an important dish in the Kerala sadhya menu. It is a flavorful yogurt and coconut based curry.I have already posted the traditional sadhya style kalan. This one is flavorful sweet and sour version with ripe mangoes or mambazham. Kurukku Kalan/katti kalan with vegetables is a specialty in Central Kerala. Mango Ice Cream Mango ice cream is a delicious treat for summer. If mangoes are in season you should definitely try making fresh home made mango ice cream.Creamy and rich mangoes add great flavor and taste to any dessert. This is an easy recipe if you have an ice cream maker. Ingredients Mango puree -  1 1/2 cup Chopped mango- 3 tbs Egg yolk-3 Lemon zest- 1/3 tsp Milk- 1 cup Heavy cream 2 1/2 cup Sugar- 3/4 cup Make a puree of mangoes and allow it to chill. Heat half of the cream and milk in a heavy bottom Do not allow it to boil. Beat egg yolks and sugar. Gradually add 1/3 of the milk into the egg mixture stirring continuously. Kadumanga/Mango Pickle

Kadumanga/Mango Pickle Today's recipe is a tongue tickling and addictive mango pickle.This pickle is called Kadamanga and is quick and instant pickle.It is an indispensable part of Kerala Sadhya , our traditional vegetarian feast. This pickle is made for wedding feasts and major festivals like Onam and Vishu. Sadhya preparation is a lengthy process and at home pickles are usually made the day before. Mango, lemon and ginger pickle is must have for sadhya. I think Kadumanga is the easiest pickle to make. Ginger pickle or inji curry takes more time to make, so I start with it and kudamanga is the final pickle. This hard to resist spicy condiment can be made in a jiffy. We rarely get raw mangoes here and last week I was so glad to come across raw mangoes in our grocery store. I took a few and planned mango pickle and a batch of kadumanga for Onam Sadhya.
