Kerala Beef Biryani Biryani is a glorious one pot meal,satisfying and delicious. It is an exotic dish prepared and served on all festive occasions. The rice and meat is gently spiced and flavored with earthy spices. Biryani is a one pot meal, but not easy (of course there is a quicker pressure cooker version! ), as prepping and making a good biryani is time consuming. Mexican Tomato Fried Rice

Mexican Tomato Fried Rice Fried rice is an easy and tasty way to use left over rice and vegetables. This is a Mexican inspired tangy and yummy tomato fried rice.  I have used both tomato puree and tomato sauce for this recipe. Try this simple recipe,you will surely love it. Ingredients Cooked rice- 3 cup (cook with chicken broth) Tomato puree- 3/4 cup Chopped onion- 1 medium Minced garlic- 2 cloves Sweet pepper or bell pepper chopped- 1/2 cup Paprika- 1/4 tsp Grated carrot- 3/4 cup Tomato paste- 2 tbs Jalapenos -  2 chopped Oregano and thyme- a pinch Chopped parsley, rosemary - 2 tbs Oil Salt and pepper to taste Heat oil in a pan and saute onions and garlic for two minutes. Add tomato puree and paste and allow it to cook and reduce. Malabar Thenga Choru Malabar Tenga Choru/ coconut rice delicious and fragrant rice. It is your simple regular rice cooked in coconut milk . I used jeerakashala/ kaima rice, a tiny aromatic rice that is common in Malabar region of Kerala. It is very simple yet exotic and perfect for any occasion. If you have sudden  guests and do not have much time to make an elaborate dinner or lunch,try this quick and delicious rice. Tenga Choru can be paired with any spicy curry. Ari Unda/ Rice Ladoo

Ari Unda/ Rice Ladoo Today's recipe is a humble sweet/ladoo made with rice. There is another version of ari unda/ avalose unda that,I posted earlier.Rice ladoos/ari unda  is a traditional sweet of Kerala with very little ingredients, rice, coconut,and jaggery. It has the beautiful aroma of roasted rice,  cardamon and cumin. This is my mother- in -laws recipe and it tastes yummy. Try this, you will surely love it. Ingredients Red rice/matta rice/parboiled rice- 2 cup Jaggery powdered- 1  1/2cup Coconut grated- 1 cup Ghee- 1 tsp Cardamon powder- 1/2 tsp Cumin powder- a pinch Wash rice and drain, spread on a cloth or towel to get dry.  Heat a pan and add the rice. Egg Fried Rice

Egg Fried Rice Egg fried rice is simple and quick meal with egg and left over rice. Egg fried rice is usually served as breakfast and is minimal yet tasty and filling. Try this you will surely love it. Ingredients Cooked rice- 2 cup Egg-3 Minced garlic- 1 tsp Spring onions- 1/2 cup chopped Crushed chilly- 1/8 tsp (optional) Soya sauce- 1 tsp Pepper and salt to taste Sesame oil- 1 tbs In a pan add few drops of oil and add one beaten egg. Quickly scramble it and stir fry for a minute till it gets dry. Add pinch of salt and pepper and set this aside. This step is optional, this can be used later to garnish along with chopped spring onions. In the same pan add oil. When hot add the crushed red chilly flakes and minced garlic. Rajma/Kidney Beans Pulao  Pulao is simple one pot meal and I often make with vegetables or meat. This time I had some leftover kidney beans/rajma. Its delicious and aromatic combo of rice, spices, beans and vegetables. It is easy lunch box recipe. Ingredients Basmathi Rice- 1 1/2 cups Kidney beans- cooked- 1 cup Beans- 1/2 cup Onion- 1 Green chilly- 3 Ginger- 1 inch piece Garlic- 2 Turmeric- 1/2 tsp Garam masala- 1/8 tsp Chicken broth/ Vegetable broth- 1 cup Water- 2 1/2 cup Whole spices-Cinnamon- 1 inch  stick,Cardamon- 2,Cloves - 4 Lemon juice-  1 tsp Salt to taste Cashew nuts chopped- 5 Raisins- a few Oil 2 tsp Ghee- 1 tsp To cook rajma/kidney beans soak over night.
