Easy Chicken Fried Rice Recipe
Chicken fried rice is simple and easy to make at home. Who does not like fried rice? There are so many varieties of fried rice that you can try, and it is irresistibly delicious and packed with flavor. Chinese restaurant-style fried rice is the best healthy weeknight dinner, and the leftovers are great for lunches. It is my number one favorite when it comes to takeout. But you got to admit sometimes the takeout fried rice can be boring, and bland with little veggies and under cooked rice. So why not try making fried rice at home. This homemade fried rice recipe has been a lifesaver that is better than takeout fried rice!
I make a big batch of fried rice once a week, and it can be easily customizable.You can make delicious fried rice with whatever we’ve got on hand in the fridge or freezer. Try different kinds of proteins like chicken, beef, pork, shrimp, fish or eggs or with veggies like peas, carrots, beans, bell pepper, mushroom, pineapple, etc. If you have the rice pre-cooked, this one-skillet rice will be ready under 20 minutes. It is a filling meal by itself and is perfect for any occasion. This chicken fried rice recipe is easy and super delicious. Give this recipe a try and let me know how it turned out for you. Enjoy!
Prep the ingredients ahead of time- This is one of the most important steps in making fried rice. Fried rice has to be cooked, at a high temperature. Once you start cooking, it moves super fast. So be sure to have everything ready to toss into the wok before you start cooking!
Rice- Chilled Cooked rice is the star ingredient. The rice should be thoroughly cooled before you start making the fried rice. It is best to use leftover rice chilled in the refrigerator. If you don’t have any leftover rice from the night before, cook a batch of rice, and spread it on a large baking sheet, and let the rice come to room temperature before using it for fried rice. You can use long-grain rice, jasmine rice, brown rice, or basmati rice. Cauliflower rice is also quite popular. You can find it in the freezer session in your grocery store. To make your pulse cauliflower in a food processor until it forms rice-size pieces, and enjoy it in place of white rice.
Meat/chicken-For packed flavor and taste marinate the meat, preferably overnight. For the marinade, I used a combination of freshly grated ginger, soya sauce, sesame oil, and corn starch. You can boil your chicken and cut into small cubes or use up leftover marinated chicken, chicken teriyaki, leftover roasted chicken, or beef. Alternatively, you can shallow fry your chicken till the outside is slightly crispy, and it is no longer pink. Chop it up and add to your fried rice.
Veggies like carrots, beans, green peas, green onions add so much flavor and make fried rice attractive. You can also try adding broccoli, celery, bell pepper, mushrooms.
Flavor- These ingredients help to build the flavor profile of the fried rice. Flavoring like garlic, sesame oil, soya sauce, butter, Chinese five spices enhances the flavor. Sesame oil adds a subtle flavor to the rice and gives you an authentic fried rice flavor. Chilly garlic sauce, fish sauce, or oyster sauce can be used according to your taste preference. Oyster sauce is loaded with complex flavors, adds a lot of depth to the fried rice-a little goes a long way!
Cooked rice- 3 cups
Boneless chicken-cut into strips- 1 cup
Soya sauce - 2 tbs
Oyster sauce- 1 tsp
Onion-1/2 small onion
Garlic- 4 pods
Ginger chopped- 1/2 tsp
Spring onion chopped- 1/3 cup
Chopped vegetables- 1 1/2 cup
( here I have used carrots,celery,green beans and green bell pepper)
Chinese five spice powder- 18 tsp (optional)
Cut chicken into thin strips. Marinate with 1 tsp ginger paste, soya sauce, sesame oil, pepper powder, corn starch. It is best to marinate the chicken overnight, or at least 10- 15 minutes.
Whisk eggs till light and fluffy. In a pan, heat butter and add the eggs make a soft scramble, and set this aside. Do not overcook the eggs.
Pour two tsp of oil in a wok/ pan and add the minced garlic and ginger and after a minute, add the marinated chicken and fry till and cooked through and golden brown. Strain from the oil and keep aside.
In the same pan, stir fry all the vegetables starting with onion, and after a minute, add carrots and green beans fry for two minutes. Finally, add bell pepper stir fry for a few seconds.
Return the fried chicken to the pan along with the cooked rice. Drizzle soya sauce, dark soya sauce, oyster sauce, and spice powder. Mix well and fry the rice in high heat for two to three minutes. Finally, garnish with spring onion.

I used celery hearts for this recipe..Foxy's two in a package..I usually store in the same package in the vegetable bin and they remain fresh for about eight to ten days...The package instruction for continued crispness is to rinse and chill..I use the same method and loosely cover with paper towel
I have tried freezing once,but it was a disaster..it gets watery once thawed. But certain things like chillies,chopped ginger,curry leaves and coriander leaves can be frozen. Will ask my friends and will certainly share with you the methods they use :)
i know...freezing leaves it watery after thawing...don bother to find out. i guess all leaves remain fresh only for max 15 days in the refrigerator.
