Chala/Sardine Fish Fry Spicy sardine fry with rice is my absolute comfort food. Curried or fried sardine fish tastes delicious. Sardine/ Chala/Mathi is found in abundance along the long coastline of Kerala, and so many different ways to cook sardine. Sardines are sustainable food for the coastal regions and are inexpensive and healthy. My favorite way to enjoy sardine is quick and easy fry. These pictures were clicked, during our recent visit to Kerala. It was the rainy season, and we were lucky to enjoy this yummy fish fry. Goan Fish Fry Fish fry is my all time favorite comfort food and we make them often for lunch and dinners. For all those lazy days, I usually stick to a simple and basic marinade for fish fry. But sometimes experimenting with different regional flavors is good to take simple fish fry, to the new level.This recipe is inspired from Mye's Kitchen and from a tv show. The marinade has an enticing flavor similar to the Vindaloo marinade.This is a tasty and tempting fish fr. Try this you will surely love it. Ingredients King Fish- 4 slices Kashmiri chilly powder- 1 1/2 tsp Ginger- 1 inch piece Garlic- 5-6 pods Turmeric powder- 1/4 tsp Whole black pepper- 1/2 tsp Fennel seeds- 1/4 tsp Clove- 2 Cumin seeds- 1/2 tsp Mustard seeds-1/ 2 tsp Roasted fenugreek seeds- a few Rice flour or semolina- 1tbs(optional) salt to taste Vinegar- 1 1/2 tbs oil for frying Clean fish and squeeze some lemon juice,rub on the fish and then give a final rinse. Chettinad Fish Fry

Chettinad Fish Fry Fish fry is my all time favorite comfort food. We make simple fish fry often, but the Chettinadu fish masala is flavorful and tasty. Started loving this spicy and tempting fish fry. I used king fish but you can use any kind of fish or prawns for this recipe. Ingredients King Fish- 4 slices Pearl onion-2-3 Chilly powder- 1 tsp Ginger - 1 small piece Garlic-3 pods Turmeric powder- 1/4 tsp Pepper powder- 1/4 tsp Fennel seeds- 1/4 tsp Cumin seeds- 1/4 tsp Rice flour- 1/2 tsp (optional) salt to taste lemon juice- 1/2 oil for frying Clean fish and squeeze some lemon juice,rub on the fish and then give a final rinse. Make a paste of shallot, ginger, garlic,cumin seed and fennel seeds. Into this mix chilly powder, turmeric powder,pepper powder and salt. Sprinkle little water and make a smooth paste. Amritsari Fish Fry

Amritsari Fish Fry Amritsari fish fry is a popular street food. These crispy batter fried fish can be served as an appetizer/ starter.  You can use any type of fish for this recipe. Cut it into thin slices or into strips if you like it   crispy. Ingredients Fish- 1 lb Chilly powder- 1/2 tsp Turmeric powder- a pinch Cumin powder- a pinch Ginger garlic paste- 1 1/2 tsp Malt vinegar- 1 tbs Chat masala -1/2 tsp Kasuri methi- a pinch Salt to taste For the batter Besan/ chickpeas flour- 1 cup Rice flour- 1 tbs Yogurt- 1 tbs Egg white- 1 (optional) Ajwain - a pinch Chilly powder-  1/4 tsp Turmeric powder- 1/4 tsp salt to taste Oil for frying  Clean and cut fish into desired shape. Sardine/Mathi Fry Today's recipe is my absolute comfort food.... Sardine fish fry/mathi fry. It is quick and simple and perfect side dish for rice. Ingredients Mathi/ Sardine- 6-8 medium sizes Onion- 1 medium Fennel seeds- a pinch Pepper powder- 1/4 tsp Ginger chopped- 2 tsp Curry leaves- a few Chilly powder- 1 tsp Turmeric powder- 1/4 tsp Pepper powder- 1/4 tsp Fenugreek powder- a pinch Ginger garlic paste-1 tsp salt to taste Coconut oil for frying   Clean fish and squeeze some lemon juice,rub on the fish and then give a final rinse. Make a few gashes on the fish. Mix chilly powder, turmeric powder,pepper powder,fenugreek powder,ginger garlic paste and salt. Sprinkle little water and make a smooth paste. You can add a few drops or vinegar or lemon juice instead of water to make a paste. Keep half tsp of masala for later use. Spicy Salmon Fish Fry Spicy salmon fish fry is a perfect accompaniment with rice and rasam. The marinade for this fish is spicy and flavorful with garlic and fennel. Try this you will surely love it Ingredients Salmon- 1 pound Chilly powder- 3/4 tsp Turmeric powder- a pinch Pepper powder- a pinch Ginger garlic paste-1/2 tsp Lemon juice- 1/2 lemon Fennel seeds- a few crushed Dry red chilly- 1 Whole garlic- 2 Cloves-2 salt to taste oil for frying Crush 2 cloves of garlic, fennel seeds, dry red chilly and cloves using a mortar and pestle and keep aside. Mix chilly powder, turmeric powder,pepper powder,ginger garlic paste and salt and lemon juice into a smooth paste. Apply this on the fish and let it  marinate for five minutes. When it is time to fry dab the crushed masala on top of the fish and press so that it sticks on the fish. Crispy fried Anchovies/Netholi/ Podimeen Varuthathu Crispy fried Anchovies is super yummy and invokes childhood memories. Do you like fish as a snack? well I love crispy fried anchovies as a snack. My grandmother and mother used to make them when we were kids and gave it in small plates for snacking.  This is a quick and easy fish fry with Veloori or white sardine. It is crispy and tasty fry. This recipe is from my mother in law. You can also use Anchovies for this recipe Ingredients Anchovies or vellori- 1/2 lb Kashmiri chilly powder- 1 tsp Pepper powder- 1/3 tsp Turmeric powder- 1/3 tsp Fenugreek powder- a pinch lemon juice- 1/2 tsp Chick peas flour or rice flour-1 tbs Egg white- 1 (optional) Curry leaves - a few Thinly sliced onion- 1/2 cup salt and oil for frying Veloori Fish fry (this one my mother-in -law made and I clicked the pic ) Clean fish and marinate with all ingredients listed above except oil. Cajun Spiced Tilapia

Cajun Spiced Tilapia/Fish fry Quick and yummy fish fry with a flavorful blend of Cajun spices. The spice blend has a rich color and spicy . It goes well with salsa or roasted potatoes. You can use any fish of your choice. If you like breaded deep fried fish you can coat with flour or corn meal. Ingredients Fish-3 fillets Cayenne Pepper- 1 tsp Ground pepper- 1/4 tsp Sweet Hungarian pepper- 1/2 tsp Salt to taste Fennel seeds  ground- 1/2 tsp Dried thyme- 1/2 tsp Lemon zest- 1 tsp Lemon juice- 1 tsp Garlic paste- 1 tsp Place fish on a dish and coat both sides with olive oil. Mix the garlic paste and lemon zest with the the spice rub and spread evenly on both sides and allow to marinate for 10 minutes. Shallow fry the fish 2 minutes on both sides till evenly brown and and crispy in the edges. Drizzle lemon juice before serving. Try this Hope you will all enjoy!

Stuffed Fish Fry

This is a delicious stuffed fish fry which is tangy and spicy.I was fascinated when I saw a stuffed Pomfret recipe. Usually there are different types of stuffing like sauteed prawns or crab meat. But here I used a tangy tomato and onion masala very similar to the Karimeen  pollichathu , that I posted earlier. You can use two fish fillets and make a  sandwich or slit through the fish very close to its bone and fill in the stuffing. Give this recipe a try,you will surely love this. Pepper Fish Masala

Pepper Fish Masala is a simple fish preparation which can be served as a side dish for steamed rice or masala rice. It is fried fish  sauteed in masala gravy till completely dried up.It is flavorful with caramelized onion, roasted coconut and sesame seeds. I have added a little of garam masala., but  it is optional.You can use any kind of fish..here I have used King fish. Ingredients Fish - 1 lb Onions- 2 medium Tomatoes-1 medium Ginger- 2 inch thick Sesame seeds  - 2 tsp Coconut grated- 1/3 cup chilly powder- 1/2 tsp Pepper powder- 1 tsp turmeric- 1/3 tsp coriander  powder - 1/2 tsp Garam masala- 1/2 tsp Lemon juice-1/2 lemon coriander leaves Salt to taste oil for frying Marinate fish pieces with turmeric,salt, half of the pepper powder and lemon juice. This is a spicy fish fry which my family enjoys every time it is made at home. It goes well with rice and  fish curry. There is no doubt that these trio complement each other so well and is indispensable part of the lunch menu back home in Kerala.The marinade I have used has a unique south Indian blend of spices and you can increase or decrease the amount of spices to suit your taste. What I love in this fish fry is the blend of flavors of coconut oil,curry leaves and shallots. Ingredients Fish- 4-5 medium sized pieces Shallots 2-3 small Ginger- 1 inch thick Garlic- 2 pods Green chilly- 2 Dry Red Chilly-3 Pepper whole- 3/4 tsp Turmeric powder- 1/3 tsp Lemon juice- 1/2 tsp Mint leaves- 5-6 Curry leaves 4-5 Salt to taste- Coconut Oil for frying Place all ingredients except fish and oil into a mixer and blend into a smooth fine paste. Masala fish fry is a very tasty fish preparation. It has great aroma of poppy seeds, sesame seeds,coconut and curry leaves. This one is inspired from a TV show but I have brought certain changes to the original one . The recipe actually uses gram masalas, coriander powder and tamarind paste but I used green chilly, curry leaves and lemon juice and only a little of fennel seeds instead of garam masala. This came out very tasty and flavorful which my family enjoyed.
