Sweet and Tangy Corn

Still remember those childhood days and the beach... enjoying the grilled corn that we buy from street vendors..salty, spicy and with a bit lemon juice rubbed on the corn. Corn recipes are often very tempting and hot corn-on- the-cob is an essential for any summer time party. This recipe I have tried with frozen corn kernels and is a good accompaniment with chapatis or flat bread. I also tried it as part of a chicken avocado tortilla wrap.

 Ingredients

Corn Kernels - 1 cup

Tomato- 3 medium

Tomato puree- 1/2 cup

Sliced bell pepper- 1/2 cup

Onion- 1/2 cup

Chilly powder or paprika- 1/3 tsp

Pepper powder- 1/3 tsp

Fenugreek- 1/3 tsp

sugar- 1 tsp

salt to taste

oil- 1 1/2 tsp

butter- 1/2 tsp

coriander leaves for garnish

Microwave corn in high for three minutes. Saute bell pepper for a minute and keep aside.
In the same pan saute onions till translucent and add in the diced tomatoes, salt and cook them till it is soft. Add in tomato puree or you can add tomato paste ( 2 tsp) if you prefer. Saute this till the mixture is cooked and starts leaving the pan. Add chilly powder, pepper powder and fenugreek, sugar and corn kernels and blend it gently with the tomato mixture. Finally add butter. Serve it with the sauted bell pepper.

Kerala Black Halwa/ Karutha Halwa/ Rice Flour Halwa December has finally arrived and it means it is almost Christmas time! How many of you look forward to the Season of Joy! My birthday also comes in December, so it is a double celebration for me :) How is the Christmas planning coming along for everyone? It is exactly three weeks for Christmas and I am planning to share a few recipes for the holidays this year. This is the first one I wanted to share with all of you -Kerala style sweet delicacy- a real nostalgia, the Black Halwa. Halwas has always amazed me with its simplicity, unique texture and taste. It is a gel-like sweet candy that you can never stop eating. When making halwa there is a time-honored cooking technique and halwa making is time-consuming. So people simply prefer to buy it from the shop. But making your own is a rewarding experience. Now many of the traditional sweets are forgotten or get overlooked for fancier ones in bakeries. But that is not the case w

Spicy Fish fry

This is a spicy fish fry which my family enjoys every time it is made at home. It goes well with rice and  fish curry. There is no doubt that these trio complement each other so well and is indispensable part of the lunch menu back home in Kerala. The marinade I have used has a unique south Indian blend of spices and you can increase or decrease the amount of spices to suit your taste. What I love in this fish fry is the blend of flavors of coconut oil, curry leaves and shallots. Ingredients Fish- 4-5 medium sized pieces Shallots 2-3 small Ginger- 1 inch thick Garlic- 2 pods Green chilly- 2 Dry Red Chilly-3 Pepper whole- 3/4 tsp Turmeric powder- 1/3 tsp Lemon juice- 1/2 tsp Mint leaves- 5-6 Curry leaves 4-5 Salt to taste- Coconut Oil for frying Place all ingredients except fish and oil into a mixer and blend into a smooth fine paste.
