Chicken Spring Rolls

Spring rolls needs no special introduction. This is my kids favorite, so I make them often as a snack. Chinese Style spring rolls are traditional festival food. Pastry sheets with meat and vegetable filling, is rolled into cylinders and deep fried  to from a crispy and tasty appetizer. You can also try other vegetables like Napa cabbage, mushrooms, bean sprouts or tofu. 

Ingredients
Chicken- 1/2 pound
Ginger and garlic minced- 1 tbs
Soya sauce- 1 tsp
Oyster sauce-1/2 tsp
Dry chilly flakes-1/3 tsp optional
Black pepper- 1/2 tsp
Salt to taste
Sugar- 1/2 tsp
Cabbage shredded- 1 cup
Carrot grated- 1/2 cup
Spring onion stalks- thinly sliced
Spring roll wraps- 20 defrosted
oil for deep frying- 1 1/2 cup


To make the filling
Heat a pan/ wok and add oil. Add finely sliced chicken ( or minced chicken) and stir fry in high for 2 minutes. Sprinkle pepper powder, soya sauce and oyster sauce and continue to stir fry, till chicken is crisp and cooked. Remove the chicken from the pan.
In the same pan add one more tbs of oil and saute the minced garlic and ginger. After a minute add the chilly flakes,the sliced green onion, cabbage and shredded carrots.Stir fry in high heat for two minutes.  Finally the cooked chicken, sugar and toss well (you can also add a few drops of rice vinegar). Allow this filling to cool down completely.

Add 1/2 tsp of corn starch to 1/3 cup of water, mix well and keep aside. Use this to moisten the edges of the wrap.

While working keep the defrosted wraps covered by a damp cloth to prevent drying.
Place one wrap on the working board like a diamond, with one side pointing towards you. Put one tbs of filling. Lift the bottom corner and tuck it under the filling. Roll tightly half way through, fold both sides towards the center, brush  sides with corn starch liquid and continue rolling nice and tight. The moist edges with stick and seal the roll.
Heat oil in a pan, slide spring rolls into the oil in batches and fry till both sides are evenly brown and crisp. Drain on paper towels, allow to cool before serving.

Aval Payasam Happy Vishu! Wishing all my friends and readers a very happy and prosperous Vishu! Today's recipe is an irresistible payasam.. sweet and delicious. It is made with aval/poha/beaten rice and milk and sugar.You can use  jaggery instead of sugar. Aval pal payasam and it is quick recipe which can be made in a jiffy. Try to use the thick variety of white aval/poha. There is also the red rice aval. Red rice will impart a rose hue to your payasam.  This recipe will serve 4-5 people. Ingredients Aval/poha/beaten rice- 1 1/2 cup Milk- 3 1/2 cups Condensed milk- 1 cup Sugar- 3 tbs (adjust according to sweetness) Crushed cardamon- 5-6 Raisins and cashew nuts- a few Ghee- 2 tbs In a sauce pan bring milk to a boil. Heat 2 tbs of ghee in a heavy pot vessel and add cashew nut and fry for a minute followed by raisins.Saute till they change color drain and set aside. Pavakka Varuthathu/ Fried Bitter Gourd

Pavakka fry is quick and easy side dish and goes well with rice and sambar.I know it is one of the less loved vegetable because of its bitter taste..for some reason I have always loved them.Usually I make mezhukkuvaratti or pachadi but this fry is something I love to have occasionally. Try this crispy and spicy pavakka fry, you will surely love it and believe me,you will not feel the bitterness :) Ingredients Bitter Gourd/Pavakka- 2 medium Onion sliced- 1 medium Green chilly- 3 Coconut sliced- a few Chilly powder- 1 tsp Turmeric powder- 1/3 tsp salt to taste Rice flour-1 tsp (optional) Corn starch- 1 tsp( optional) oil for frying Cut bitter gourd into thin slices and mix in green chilly, coconut slices, chilly powder, turmeric powder and salt.
