Egg Fried Rice

Egg Fried Rice Egg fried rice is simple and quick meal with egg and left over rice. Egg fried rice is usually served as breakfast and is minimal yet tasty and filling. Try this you will surely love it. Ingredients Cooked rice- 2 cup Egg-3 Minced garlic- 1 tsp Spring onions- 1/2 cup chopped Crushed chilly- 1/8 tsp (optional) Soya sauce- 1 tsp Pepper and salt to taste Sesame oil- 1 tbs In a pan add few drops of oil and add one beaten egg. Quickly scramble it and stir fry for a minute till it gets dry. Add pinch of salt and pepper and set this aside. This step is optional, this can be used later to garnish along with chopped spring onions. In the same pan add oil. When hot add the crushed red chilly flakes and minced garlic. Immediately add cooked rice and stir fry for a minute. Beat eggs in a bowl and pour over the rice. Mix quickly till the rice coats with the egg and stir fry in medium for two to three minutes. Prawns Pineapple Skewers Prawns and pineapple skewers is a perfect appetizer for get together or any occassion. It is mildly spicy with sweetness from the pineapple.  I have used chipotle chille peppers which has a smokey flavor, perfect for grilling.You can substitute it with smoked paprika or regular chilly powder. Try this, you will surely love it. Ingredients Shrimp- large size- 12-15 Pineapple cubes- 3/4 cup Chipotle chile pepper- 3/4 tsp Pepper powder- 1/4 tsp Mint leaves- a few Ginger - 1 inch thick Garlic- 4-5 pods Lemon juice- 1 tsp Corn starch- 1 tsp (optional) salt to taste Oil- 2 tsp Skewers- 6-7 Small Make a paste of mint leaves, ginger and garlic. Mix chipotle chile pepper, salt, pepper powder and lemon juice and marinate prawns with this paste.Set aside for 10  minutes. Meanwhile soak the skewers in water. Pineapple Chicken Fried Rice Chicken fried rice is a family favorite and a perfect Sunday meal. Add pineapple to your regular chicken or shrimp fried rice to make a more interesting. Pineapple and chicken fried rice is sweet and savory  rice busting with flavor of caramelized pineapple. You can make it vegetarian or add chicken/ shrimp/eggs. Ingredients Cooked rice- 3 cups Chicken -1/2 lb Pineapple cubes- 1 cup Celery chopped- 1/2 cup Spring onions-1/2 cup Bell pepper chopped- 1/2 cup (or vegetables of your choice) Garlic- 3 pods Turmeric powder- 1/8 tsp (or half tsp curry powder) Red chilly flakes- 1/2 tsp Pepper powder- 1/8 tsp Soya sauce- 1 tbs Oyster sauce- 1/2 tsp Fish sauce- 1/2 tsp Sugar- 1 tsp Sesame oil-2 tbs Roasted peanuts- 2 tbs Cut chicken into small pieces. Cauliflower Pepper Fry

Cauliflower Pepper Fry Today's recipe is black pepper cauliflower fry. The sauce is flavorful with depth in flavor and the right amount of kick from the black pepper. When I tried this recipe I knew I would make this recipe again and again. It is perfect with fried rice. Try this,hope you will all enjoy! Ingredients Cauliflower- 1 head cut into bite- size florets Egg -2 Corn starch- 3 tbs flour- 1 tsp Salt- a pinch Onion- 1 medium Green onion chopped- 1 hand full Soya sauce- 1 1/2 tsp Dark soya sauce- 1 tsp Oyster sauce- 1/4 tsp Black pepper- 1 tsp sugar- 1/2 tsp Vegetable broth- 3 tbs Cut cauliflower into bite sized florets. Microwave in high for three minutes. Make a batter with eggs, corn starch, flour and a pinch of salt. Dip each florets in the batter and deep fry till golden brown and crispy. Orange Chicken Orange chicken is famous in Chinese restaurants and take out. This is a home made version. It is crispy chicken coated with a sticky citrus flavored sauce. This chicken dish is sweet and tangy with the right amount of heat from chilly garlic sauce. You can substitute chilly garlic sauce with fresh ground chilly or chilly flakes.
