But sometimes experimenting with different regional flavors is good to take simple fish fry, to the new level.This recipe is inspired from Mye's Kitchen and from a tv show. Kozhuva Pepper Fry/Anchovies Pepper Fry Anchovies when fried are crispy and super tempting. This can be served with rice or as an appetizer. It  has the spicy kick of pepper and the flavor of curry leaves. You can use either green peppercorns or ground black pepper. Try this crispy and tasty fish fry, you will surely love it. Ingredients Kozhuva/ Anchovies- 1/2 lb Egg white-1 Green pepper corns- 1 tbs (or ground black pepper according to taste) Turmeric powder- 1/3 tsp Ginger- thin slice Curry leaves - 2-3 springs Coriander leaves- 3 tbs chopped Corn starch- 2 tbs salt and oil for frying   Make a fine paste of pepper corns, ginger,curry leaves and coriander leaves. Crispy batter fried chicken is coated  with a flavorful marinade of soya sauce,garlic, leek,chilli oil and dry red chilli. This recipe is adapted from Korean chicken of Maangchi . Crispy Calamari/Squid Rings Crispy calamari rings can be served as an appetizer or as a snack. Squid/koontal deep fried and crispy is very appetizing. I usually make the Kerala style spicy roasted squid/koontal. But this one is quick recipe and kids will enjoy eating them.This is breaded calamari, you can also try tempura batter to make them. Ingredients Calamari/squid - 1/2 lb Paprika- 1/2 tsp Garlic paste- 1/2 tsp Salt and pepper to taste Lemon juice- 1/2 tsp finely chopped parsley-1/2 tsp All purpose flour- 2 tsp Egg- 2 Bread crumbs- 1 cup Oil for deep frying Mix calamari/squid with salt,pepper, lemon juice, paprika,garlic paste and chopped parsley. Chettinad Fish Fry Fish fry is my all time favorite comfort food. We make simple fish fry often, but the Chettinadu fish masala is flavorful and tasty. Started loving this spicy and tempting fish fry. I used king fish but you can use any kind of fish or prawns for this recipe. Ingredients King Fish- 4 slices Pearl onion-2-3 Chilly powder- 1 tsp Ginger - 1 small piece Garlic-3 pods Turmeric powder- 1/4 tsp Pepper powder- 1/4 tsp Fennel seeds- 1/4 tsp Cumin seeds- 1/4 tsp Rice flour- 1/2 tsp (optional) salt to taste lemon juice- 1/2 oil for frying Clean fish and squeeze some lemon juice,rub on the fish and then give a final rinse. Amritsari Fish Fry Amritsari fish fry is a popular street food. These crispy batter fried fish can be served as an appetizer/ starter.  You can use any type of fish for this recipe. Cut it into thin slices or into strips if you like it   crispy. It can be served with rice or as an appetizer. This is skillet fried,but you can also batter dip and deep fry them to serve like pakoras. It is perfect for potluck parties. It is quick and easy and can also be served as a side dish with rice like crispy potato fry.In some regions of Kerala it is served along with banana chips for sadhya. Give this spicy fry/chips a try,you will surely love it. Ingredients Yam thinly sliced- 2 cup Turmeric powder- 1/3 tsp Salt to taste Curry leaves - a few Dry red chilly- 3-4 coconut oil- 1/2 cup Cut yam into thin slices.
