Meen Mulakittathu



Meen mulakittathu or mulaku chathachatu which means fish with crushed chilly flakes- is a spicy and quick side dish for rice.  It is a fish stir fry with crushed chilly flakes,ginger and shallots.It is popular in central and southern Kerala and is usually made with dry fish or dry prawns. But here I have used fresh boneless fish and this also tastes delicious. Here are the ingredients.

Ingredients

Boneless fish- 2 lb
Shallots crushed- 1 cup
Ginger - 2 inch thick

Crushed chilly flakes- 3/4 tsp
( adjust according to taste)
Turmeric powder- 1/3 tsp
Pepper powder- a pinch
clove powder- a pinch
lemon juice- 1 tsp
mustard seeds- 1/2 tsp
curry leaves
coriander leaves
salt to taste
coconut oil- 2 tsp



Clean and cut fish into small pieces and marinate for 10 minutes with turmeric powder,a pinch of pepper powder, salt and lemon juice.
Lightly fry this in oil and set aside.

 In the same oil add mustard seeds. When they splutter add crushed onion, ginger, curry leaves and saute till golden brown.
Put back the fried fish and sprinkle chilly flakes and clove powder. Close lid and allow to cook in medium heat. When the water fully evaporated sprinkle coriander leaves.
Serve warm with rice.

Dilkhush- Baking partners challenge#8(Tangzhong Method) Baking partners challenge#8 is learning a new method of bread making. I always wished to learn bread baking at home and I thoroughly enjoyed this months challenge. There were two method of bread making, for this months challenge-one is Asian method Tangzhong and other is Scandinavian method of Scald flour. I tried the Asian Tangzhong method which was relatively easy to put together. Stuffed Fish Fry

This is a delicious stuffed fish fry which is tangy and spicy.I was fascinated when I saw a stuffed Pomfret recipe. Usually there are different types of stuffing like sauteed prawns or crab meat. But here I used a tangy tomato and onion masala very similar to the Karimeen  pollichathu , that I posted earlier. You can use two fish fillets and make a  sandwich or slit through the fish very close to its bone and fill in the stuffing. Give this recipe a try,you will surely love this.
