Kurukku Kaalan


 Kurukku kaalan is a popular dish of Central Kerala. It is a delicious yogurt and coconut based dish and is made by slowly simmering cooked vegetables and yogurt and coconut paste to a thick and creamy consistency.Kurukku literally means liquid that is reduced or thickened.It is essential part of the Kerala Sadhya, and is one of my favorites among the wide range of exquisite vegetarian dishes served during Onam or other festive celebrations. The vegetable I have used here is chembu /Taro.


Ingredients
Chembu- 5- 6 medium ones
Yogurt- 2 1/2 cup
Coconut- 1 cup
Pepper powder- 1 tsp
Chilly powder- 1/2 tsp

Turmeric powder- 1/3 tsp
Cumin- 1/3 tsp
Curry leaves
Mustard seeds- 1/2 tsp
Fenugreek seeds- 1/2 tsp
Dry red chilly-1
shallot thinly sliced-1
oil- 3 tsp
salt to taste


Cut vegetable into small pieces. Mix pepper powder in one cup of water and strain. Discard the husk. Use this water along with salt, turmeric powder and chilly powder and cook the taro till it is soft. 
Mix in thick yogurt (strain out the water using a cheese cloth) and cook a medium flame for about five to six minutes till it thickens.Stir continuously for the first two minutes and allow to simmer.
Grind coconut and cumin into a thick fine paste using very little water. Add this simmer for a minute and switch off the flame.
Heat oil and ghee in  a pan and splutter mustard seeds and fenugreek seeds followed by shallot slices red chilly and curry leaves and fry for a minute. Add this to the curry and mix well. Serve with rice.

  8. Made me nostalgic.gone back to the days I carry those bottles of kurukku kaalan to various hostels.I can taste the kalan sitting here.Btw,the combo we make is ethakka and chena.And yes,ethakka itself !! This is wonderful.Real 'kurukku' kaalan to say.

Dilkhush- Baking partners challenge#8(Tangzhong Method) Baking partners challenge#8 is learning a new method of bread making. I always wished to learn bread baking at home and I thoroughly enjoyed this months challenge. There were two method of bread making, for this months challenge-one is Asian method Tangzhong and other is Scandinavian method of Scald flour. I tried the Asian Tangzhong method which was relatively easy to put together. More important reason was that I wished to learn the technique of making dilkush or tengai bun which is very soft bread with sweet coconut filling. Green Beans Stir Fry

Green Beans Stir fry  Simple and quick Asian style green beans stir fry with the flavor of garlic, bell pepper and roasted sesame seeds and the crunch of  peanuts.It is  delicious and flavorful dish and the little spiciness comes form chilly sauce and chilly flakes.Goes well with fried rice or any Asian style dinner. Ingredients Green beans chopped- 2 cup Roasted peanuts- 1/4 cup Roasted Sesame seeds- 2 tsp Garlic- 3 cloves Onion- 1 medium Soya sauce- 1 tbs Sugar- 1/3 tsp Chilly garlic sauce- 1 tbs Chilly flakes- 1/3 tsp Corn starch- 1 tsp(optional) Cut beans into desired size. Put it in microwave in high for one minute. Heat oil in a pan and add chopped garlic and saute for a few seconds and add the green beans,onions and sprinkle chilly flakes and a dash of salt.
