Today's recipe is a hearty Kerala style vegetable stew. Do you love stews? Most of us like a comforting bowl of soup with some rustic bread. They are thick, filling and hearty warming. Today's recipe is a very traditional, old fashioned recipe. It is extremely flavorful as the vegetables are cooked in creamy coconut milk. This creamy, rich stew with vegetables and coconut milk is served for breakfast. The beauty of this recipe is its simplicity. The locals refer to this as ishtoo, local slang for stew. It is a delicious accompaniment with appam,palappam or Kerala style laced pancake. It is mildly spiced stew with a touch of sweetness from coconut milk. Appam and vegetable stew is a classic combo that you will never get tired of eating. I grew up eating this, for me, this curry is absolute comfort homey food

 Coconut is quintessential in Kerala cooking and also the coastal regions of South India. It adds a certain layer of flavor and richness to the stew. Vegetables are cooked in coconut milk and mildly spiced with green chilly. Predominant flavors are coconut milk, earthy spices, ginger and curry leaves. Use coconut oil for authentic Kerala taste. This is low fat and vegan recipe. But you can also try the nonvegetarian version. You can make it your own by adding chicken or mutton and it also tastes amazing.

Indulge yourself in this delicious stew. This stew is best relished with appam. But don't worry if you cannot make appam, it goes well with naan or chapathi or with freshly baked bread. Try this recipe, you will surely love it.


Kerala Vegetable Stew with Coconut Milk

Cooking time- 15 minutes
Recipe type- side dish/breakfast
Cuisine- Kerala/ India

Ingredients
Potato - 1 medium
Carrot-2 medium
Beans chopped 1/2 cup
( or green peas or cauliflower)
Onion- 1 small
Ginger- 1 inch thick
Green chilly -2-3
Cardamon -2
Cinnamon- 1 inch thick
Cloves- 3
Whole pepper- a few
Star Anise-1peice
Thick coconut milk- 1 cup
Thin coconut milk- 1 1/3 cup
Curry leaves- a few
Coconut oil- 3 tsp

Chop vegetables into small cubes. You can add cubed potatoes, sweet potato, carrots, green peas, beans, cauliflower ).
Heat coconut oil or any kind of refined oil. Add the whole spices and saute till there is a nice aroma.
Next add onions, sliced ginger, curry leaves and green chilly and saute till it slightly changes color. Add the chopped vegetables, salt, and thin coconut milk. Close the lid and cook vegetables until it is soft and cooked.
Once cooked add the thick coconut milk and simmer for one minute and switch off the flame. Do not allow the curry to boil after adding the thick coconut milk. Once it is warm you can switch off the flame. Garnish with fresh curry leaves. Serve with vellappam,palappam, idiyappam or bread.

    1. You can add your own combo of whole spices,it is just optional..I also love to add a pinch of crushed fennel but many will say 'a big' no to it :)
