Vellarikka Pachadi/Cucumber Pachadi

Today's recipe is a simple and refreshing pachadi made with golden cucumber.Mixed with yogurt and seasoning,you have a delicious side dish for rice.

Ingredients
Cucumber- 1 medium sized
Green chilly- 2
Salt to taste

To make a paste
Coconut- 1/2 cup
Cumin- 1/3 tsp
Mustard seeds- 1/3 tsp
Garlic- I clove (optional)
Yogurt- 1 1/2 cup
Mustard seeds- 1/2 tsp
Dry red chilly-2
Curry leaves- a few
Coconut oil- 2 tbs



Cut cucumber into thin small pieces. Cook this along with green chilly, salt and 1/3 cup of water.

Make a fine paste of coconut, cumin,mustard seeds and garlic.Mix this into yogurt and whisk . Pour this to the cooked cucumber and mix well and put it back to stove and simmer in low flame for one till it gets warmed up. Switch off the flame.
Note : do not put in a high heat, Do not heat it too much,otherwise the yogurt will separate.

Heat oil and add mustard seeds and when it splutters add dry red chilly and curry leaves and fry. Add this to the curry and mix well,serve with rice.

Uzhunnu Vada/Urad Dal Vada Uzhunnu vada or medu vada is a very common snack in south India and is a perfect accompaniment with a cup of hot piping tea.I like it as a snack but again cannot resist when it is served with idli,sambar and chutney as breakfast. One might wonder where does all the aroma come from? The  plain deep fried lentils is by itself flavorful because I make them often for  vada curry. But in uzhunnu vada the addition of pearl onions,ginger and curry leaves imparts a wonderful aroma that is irresistible.This is something I really missed when I came here to the US until I started making my home made version. Try this you will surely love it. Ingredients Urad Dal/Black lentil skinless- 1 cup Rice flour- 2 tsp Pearl Onions- 4-5 Ginger finely chopped- 1 inch thick Curry leaves finely chopped- 1 spring Green chilly  finely chopped- 3 Whole black pepper- 5-6 salt to taste Oil- 2 cup to fry Wash and soak urad dal and rice for about 4-5 hours. Drain

Samosa When it comes to deep fried snacks my favorite is samosa. There can be very few who can resist this spicy stuffed pastry. When ever I think of samosas I think of those street food vendors in India who sell the most delicious samosas ever.The taste of those samosa and the crispness and perfection of the pastry dough is really hard to recreate.  I tried making it several times and most experiments where disasters. I should admit that I learned it the hard way.The stuffing I have used here is a spicy and tasty potato peas combo.You can be creative with the filling There are different fillings both vegetarian and non- vegetarian,sweet and savory. Cooking time- 45 minutes Recipe Type- snack Cuisine - Indian Ingredients For the dough All purpose flour/maida- 1 1/2 cup Ajwain seed- 3/4 tsp Ghee/oil- 2 1/2 tsp ( use ghee for better results) salt to taste For the filling Potatoes- 2 medium Green peas- 1/2 cup Ginger chopped- 1 tsp Green chilly finely chopped-3
