Ethapazham Kozhukatta

Ethapazham Kozhukatta

Today's recipe is a tasty and guilt free snack. It is kozhakatta with the different filling. It is caramelized ripe plantain and coconut filling.Usually we use plantain to make ada or puttu for breakfast. But this time I used it as a filling for kozhukatta instead of the usual jaggery coconut filling. It had an inviting flavors of ghee, plantain and cardamon.Serve this with a cup of tea as a snack or as breakfast.

Ingredients
Rice flour- 2 cups
Hot boiling water-1 1/4 cup
Salt to taste
Sugar- 1 tsp
Coconut oil- 2 tsp

For the filling
Ripe plantain- 2
Coconut 1/2 cup
Sugar- 3 tbs
(or according to sweetness you like)
Cardamon  powder- 1/2 tsp
Ghee- 2  tsp

To make the filling cut plantains into small pieces. Heat ghee in a pan and add chopped plantain and stir fry for about 2-3 minutes or till it becomes soft. Add sugar and mix and allow the sugar to melt and caramelize. Mix in coconut and cardamon powder. Allow the mixture to cool.

Boil water along with salt and sugar ( you will need between 1 and 1/4 cup of water,  adjust accordingly till you attain a dough similar to chapathi dough ). When it comes to a rolling boil add in the coconut oil.
Take the flour in a large bowl and make a well in the center. Gradually mix in the water little by little and mix with a wooden spoon and make a soft dough. When able to handle knead into a smooth dough and make small balls. Take one ball each and flatten into circle on your palm.Place the plantain filling in the center. Carefully bring in the edges together and seal. Smooth  it into a ball.Steam this in a steamer or a pressure cooker with out the weight on for around ten minutes. To check if done wet your fingers with water and gently touch on the kozhakatta. It will be smooth on top and will not stick to your finger.Allow it to cool before serving.

 Try this..
Hope you will all enjoy...

Thalashery Chicken Biryani

Chicken Biryani is very important for festive occasions in Kerala. Different styles like Kozhikodan Biryani, Malabar Biryani, Thalashery style, Kayees Biryani famous in Central Kerala especially Cochin....the list goes on and on..... This recipe I had noted in my recipe book some time back  from a TV show. Talasherry Biryani ingredients are not much different from the usual Kerala styles, but the preparation and taste is definitely unique. In the ingredients you will find a total absence of curd and chilly powder. The rice I has used is long grain basmathi rice, as I did not have the smaller variety which is actually used in this biryani. Give this recipe a try..you will surely feel the difference. Ingredients For the Rice Basmathi Rice- 3 cups Salt to taste Cloves- 5 Cinnamon 1 inch tick Cardamon- 3 Ghee- 1 tsp Rose water- 2 tsp Water- 6 cups For the masala Chicken- 2 lb Onions thinly sliced- 6-7 medium Tomatoes- 4 medium Ginger - 2 inch thick peice Garlic- 1...

Green Peas Egg Curry- Kerala Breakfast Recipe

Green Peas Egg Curry Egg and peas taste delicious, and this simple, breezy curry is my best go-to curry for breakfast. In Kerala, egg curries are always made for breakfast and relished with soft spongy appam, idiyappam, chapathi, or bread. Every home has its easy egg curry, and it goes with almost anything. The recipe I am sharing today is mildly spicy curry flavored with coconut milk. It adds flavor and creaminess to the gravy. Kerala-style egg peas curry is made with dried green peas/ Pattani. The fresh tender green peas (garden peas/ English peas) are sweet and mild, but they are seasonal. The dried green peas are matured green peas pods with complex flavors. It is protein-rich, with a sweet nutty taste. Eggs are also protein-rich. So here you have a perfectly healthy breakfast that keeps you satisfied till lunchtime. I often do meal preps for the week to help reduce cooking time, on busy mornings. Peeled hard-boiled eggs are super easy food you can prep each week. They a...

Spiced Pineapple Pickle- Kerala Pineapple Achar

Spiced Pineapple Pickle- Kerala Pineapple Achar Pineapple pickle is a delicious pickle, fresh and bursting with tropical flavors. Pineapple pickle has a sweet and savory combination and adds a zesty kick to any meal. Do you like sweet and spicy pickles?. I love pickled, salted, and fermented vegetables and fruits . It is easy-to-make condiments and a must-have in my kitchen. My family favorites are sweet and savory pineapple chutney and spiced pineapple in salted brine. Salted pineapples are good on sandwiches, fish tacos, or roasted meat. The best part of this pickle is that you can use it just like chutney or salted pineapple. The pickle is for those who love to take the spice level a notch higher. Pineapple pickle is a tongue-tingling sweet, tangy, mildly spiced pickle. It is delicious, and the flavor and taste are irresistible. It can be paired practically with everything, but it is best with parathas and naan. This recipe is from my mother-in-law. Sweet and sour pickles a...
