Pineapple Coconut Cake

Pineapple coconut cake is now my top favorite cake:) This is an easy and fragrant cake, sweet a little tangy, flavorful and buttery. If you like the combined flavor of pineapples and coconut you will surely love this. I have used sweetened pineapple in this recipe. You can use fresh pineapple with its juice which will make it even more flavorful. I did not add sugar as I have used sweetened pineapple, coconut and sweet condensed milk. You can add sugar as per your taste. It would be great with butter icing .  I used  whipped cream and pineapple rings and dusted with a little of confectionery sugar. Ingredients Flour- 1 1/4 cup Baking powder- 1 1/2 tsp Salt- 1/3 tsp Sweetened Coconut- 1/2 cup Sweetened Pineapple- 8 oz container Eggs- 3 Butter- 1/2 cup Vanilla essence- 1 tsp Condensed milk- 1/2 cup nutmeg powder- a pinch Preheat oven to 350 degree F. Aviyal Recipe- Kerala Sadhya Style Mixed Vegetable Curry

Aviyal Recipe- Kerala Sadhya Style Mixed Vegetable Curry Aviyal is a traditional dish of Kerala typically made with assorted vegetables. It is a colorful dish and is healthy too. It is an indispensable curry for Kerala Sadhya. If you are new to Kerala Sadhya, it is a hearty meal, a vegetarian feast made on festive occasions. It is always served, on a banana leaf with rice, pickles, chips, and curries ranging from mild to spicy vegetable curries. Aviyal is a filling and less spicy vegetable curry. Aviyal is a Kerala specialty dish but, you can find aviyal in Tamilian feasts too. Traditionally we use raw plantains, yam, snake gourd, ash gourd, eggplant, cluster beans, yard beans, drumsticks (moringa), pumpkin, carrots, Chembu( taro), raw mango and pearl onions, etc. I love the flavor of the dish, it is mi...

Undan Pori

Undan Pori Today's post is a delicious snack usually common in small restaurants and tea stalls of Kerala. It resembles very much to the unni appam yet it is different in its taste and texture. Undan pori  is crispy and crunchy and at the same time soft and spongy inside. This snack was regularly seen in our college canteen. But this humble snack was brought it only if there was a shortage of uzhunnu vada and parippu vada. It sounds funny but being away from Kerala I felt a craving for this snack and tried it once, but I did not get the perfect chayakada/teastall taste. When I saw this recipe in Swathi's blog -Zesty South Indian Kitchen-I knew this was the perfect recipe. I tried it and it was really delicious. Thanks Swathi for the recipe. Ingredients Wheat flour- 1 1/3 cup Rice flour- 1/3 cup (optional) Baking soda-a pinch Jaggery- 3/4 cup Small banana mashed-3 Cardamon  powder-1/3 tsp Ghee- 1 tbs Coconut pieces- 1/3 cup salt- a pinch oil for frying ...
