Nankattai

Nankattai  is a very popular Indian tea time cookie and has the perfect crumbly melt in mouth texture. It is buttery, with the inviting fragrance of cardamon. It has been my favorite cookies and still remember those inviting and beautiful round cookies arranged in glass jars in bakeries and canteens. I had no idea that it was so simple and easy to make. ya much easy than baking a cake. It has very little ingredients and can be put together quickly. Serve this with a cup of tea and enjoy :)

Ingredients

All purpose flour- 1 cup
Corn starch or Rava-2tsp
Baking powder- 1/2 tsp
Baking soda- a pinch
Salt- a pinch
Powdered sugar- 1/2 cup
Butter- one stick( 1/2 cup)
Cardamon-1/2 tsp

Mix and combine flour, corn starch, baking powder, baking soda and salt and set aside.
In a mixing bowl combine room temperature butter and powdered sugar till it is light and fluffy. Add cardamon powder and mix well. Add the flour mixture little by little till it is well combined and one smooth ball. Cover and let it rest for half and hour.
Preheat oven to 200 degree F and line cookie sheet with butter paper. Divide the dough into small balls and roll between your palms and gently press. Bake them for 15 minutes. Take out of the oven and allow to cool completely and store in air tight container.

Try this...
Hope you will all enjoy..

Kerala Black Halwa/ Karutha Halwa/ Rice Flour Halwa

Kerala Black Halwa/ Karutha Halwa/ Rice Flour Halwa December has finally arrived and it means it is almost Christmas time! How many of you look forward to the Season of Joy! My birthday also comes in December, so it is a double celebration for me :) How is the Christmas planning coming along for everyone? It is exactly three weeks for Christmas and I am planning to share a few recipes for the holidays this year. This is the first one I wanted to share with all of you -Kerala style sweet delicacy- a real nostalgia, the Black Halwa. Halwas has always amazed me with its simplicity, unique texture and taste. It is a gel-like sweet candy that you can never stop eating. When making halwa there is a time-honored cooking technique and halwa making is time-consuming. What I love in this fish fry is the blend of flavors of coconut oil, curry leaves and shallots. Ingredients Fish- 4-5 medium sized pieces Shallots 2-3 small Ginger- 1 inch thick Garlic- 2 pods Green chilly- 2 Dry Red Chilly-3 Pepper whole- 3/4 tsp Turmeric powder- 1/3 tsp Lemon juice- 1/2 tsp Mint leaves- 5-6 Curry leaves 4-5 Salt to taste- Coconut Oil for frying Place all ingredients except fish and oil into a mixer and blend into a smooth fine paste. Cut and clean fish and marinate with this paste and keep aside for fifteen minutes. Shallow fry in coconut oil. Flip over th
