Vazhuthananga Urulakizhangu Curry/ Brinjal Potato curry


Vazhuthananga urulakizhangu curry or  Brinjal Potato curry is a yummy side dish for rotis/chapathis or rice.This is my moms recipe, she learned it from one of her Telugu friends. I believe it was originally the stuffed brinjal recipe which she modified as a side dish for chapatis.It is lightly fried brinjal and potatoes in a spicy and tangy sauce,flavored with roasted coconut and sesame seeds.Try this you will surely love this.


Ingredients
Baby Brinjal-8-10
Boiled baby potatoes-8-10
( You can also use the larger ones)
Onion chopped- 1 medium
Tomatoes-2
Ginger garlic paste- 1 1/2 tsp
Chilly powder- 1 tsp
Turmeric powder- 1/2 tsp
Coriander powder-1 tsp
Garam masala- 1/2 tsp
Sesame seeds-2 tsp

Grated coconut- 3 tsp
Curry leaves
Salt to taste

Slit baby brinjal into four keeping the stem intact. Rub a little of salt in between and shallow fry this in a little oil in medium heat till all sides are equally roasted. Keep this aside.
Boil potatoes and peel off the skin and cut into half.
Heat oil and saute onion, ginger garlic till  golden brown. Add tomatoes and curry leaves and saute till tomatoes get cooked and mashed up. Add chilly powder, turmeric powder, coriander powder and garam masala and fry for a minute. Add fried brinjal and potatoes and 3/4 cup of water.Simmer and cook till the sauce thickens.

In a fry pan dry roast sesame seeds and coconut till golden brown. Make a fine powder and add into the curry. Mix well and finally garnish with coriander leaves.

Undan Pori

Undan Pori Today's post is a delicious snack usually common in small restaurants and tea stalls of Kerala.It resembles very much to the unni appam yet it is different in its taste and texture. Undan pori  is crispy and crunchy and at the same time soft and spongy inside. This snack was regularly seen in our college canteen. But this humble snack was brought it only if there was a shortage of uzhunnu vada and parippu vada. Ellu unda/Sesame Seeds Ladoos Today's recipe is a simple guilt free sweet- the crunchy and tasty ellu unda/sesame seeds balls. As a kid I used to love this and I love it even now. You can make these in batches and store it and it can a healthy treat for kids. I have used a little coconut in my ellu unda/til ladoo but it is optional.The most important part of this recipe is making the jaggery syrup and its consistency. You can either melt jaggery and water and thicken the syrup or add powdered jaggery to little ghee and melt it.The former will give you soft ladoos and the latter harder crispy ones.
