Vendakka/Okra Kurma

Vendakka/Okra Masala

This is  a delicious side dish for rotis/chapatis. I love okra either fried or stuffed. This time I decided to give it a change and tried this okra kurma. This curry has lightly flavored cashew and yogurt sauce. The Okra is first stir-fried and finally goes into the sauce. So the curry is not slime which most people hate in okra. Try this you will surely love it.

Ingredients

Okra- 350 gms
Onion- 1 medium
Tomato- 1 medium
Green chilly-4-5
Ginger garlic paste- 1 1/2 tsp
Turmeric powder- a pinch
Garam masala- 3/4 tsp
(or you can add whole spices)
Coriender powder- 1 tsp
Mustard seeds-1/2 tsp
Yogurt- 1/2 cup
Curry leaves- a few

To make a paste
Cashewnuts-10-12
Coconut- 3 tsp
Fennel seeds- 1/2 tsp

Wash and wipe okra completely dry using a paper towel. If it is larger okra cut into two. Heat oil ( 2-3 tsp) in a pan and and fry okra till it is soft and cooked and all the sliminess goes off. Add salt and stir for two more minutes and keep aside. This will take about four to five minute.
Make a fine paste of coconut, cashews and fennel seeds and keep aside.
Heat oil in a pan an add mustard seeds and when they splutter add finely chopped onions, green chilly and curry leaves. Saute till onions change color. Now add turmeric powder and ginger garlic paste and saute till the raw flavor disappears. Add coriander powder, garam masala and beaten yogurt.Saute till all all the water evaporates and next add in the cashew paste. Stir continuously for about three to four minute in low flame till all the masala becomes one mass and oil separates. Add one cup of water, salt, diced tomatoes and bring this to a boil. Finally add okra and simmer for two more minute. Serve with chapatis..

Try this..
Hope you will all enjoy..

  29. hi suja.. chapati and okra kurma just perfect for me.
for us,in our traditional method- we wash the okra first without cutting and leave aside.
when it is time to put the okra, only then we slice them and they fall directly into the boiling pot of gravy..this way, the okra will not produce slime.
would love to try out your recipe :)

Pineapple Coconut Cake

Pineapple coconut cake is now my top favorite cake:) This is an easy and fragrant cake, sweet a little tangy, flavorful and buttery. If you like the combined flavor of pineapples and coconut you will surely love this. I have used sweetened pineapple in this recipe. You can use fresh pineapple with its juice which will make it even more flavorful. I did not add sugar as I have used sweetened pineapple, coconut and sweet condensed milk. You can add sugar as per your taste. It would be great with butter icing .  I used  whipped cream and pineapple rings and dusted with a little of confectionery sugar. Ingredients Flour- 1 1/4 cup Baking powder- 1 1/2 tsp Salt- 1/3 tsp Sweetened Coconut- 1/2 cup Sweetened Pineapple- 8 oz container Eggs- 3 Butter- 1/2 cup Vanilla essence- 1 tsp Condensed milk- 1/2 cup nutmeg powder- a pinch Preheat oven to 350 degree F. Undan Pori

Undan Pori Today's post is a delicious snack usually common in small restaurants and tea stalls of Kerala. It resembles very much to the unni appam yet it is different in its taste and texture. Undan pori  is crispy and crunchy and at the same time soft and spongy inside. This snack was regularly seen in our college canteen. But this humble snack was brought it only if there was a shortage of uzhunnu vada and parippu vada. It sounds funny but being away from Kerala I felt a craving for this snack and tried it once, but I did not get the perfect chayakada/teastall taste. When I saw this recipe in Swathi's blog -Zesty South Indian Kitchen-I knew this was the perfect recipe. I tried it and it was really delicious. Thanks Swathi for the recipe. Ingredients Wheat flour- 1 1/3 cup Rice flour- 1/3 cup (optional) Baking soda-a pinch Jaggery- 3/4 cup Small banana mashed-3 Cardamon  powder-1/3 tsp Ghee- 1 tbs Coconut pieces- 1/3 cup salt- a pinch oil for frying ...
