Mango Mousse

Starting this New year with a delicious treat, a wonderfully light and fluffy mousse. This is an egg less luscious dessert with made with mango puree and whipping cream.You can make it ahead and it is perfect for a dinner party especially if you do not want a overtly sweet desert. It is a light dessert and I love the color and flavor of mangoes. Try this,you will surely love it.

Ingredients

Mango puree- 2 1/2 cup
Whipping cream- 2 cup
Granulated sugar- 1/2 cup
( Add according to mango sweetness)
Gelatin- 1 packet
Salt- a pinch

lemon juice- 1/2 lemon


 Soak the gelatin in ice cold water for approx. 5 minutes.
Make a fine puree of the mango and put through a sieve before proceeding with the recipe.
Take 1/3 of the mango puree in a sauce pan and heat it in a low flame. When it is warm add the gelatin and mix well till it completely dissolves. Take off from the flame and mix in the rest of the mango puree and lemon juice and 1/3 cup of sugar. Put this in the refrigerator and allow to cool and slightly thicken.
 In the meantime whip the cream until soft peaks form, then drizzle in the remaining sugar and whip till incorporated and continue to whip till stiff it becomes stiff peaks. Remove the mango mixture from the fridge and gently fold in the whipped cream. Pour into dessert bowls and allow to set in fridge for 3-4 hours before serving.

This masala okra stir fry is inspired by the masala stuffed okra with I have been seeing around made by my fellow blogger's. Vada Kootucurry

Vada kootu curry is a spicy vegetarian curry made with Vadas.  It is urad dal/black gram, soaked and made into a paste, fried and added to a  spicy potato and coconut stew. It is made and served during Sadhyas in southern part of Kerala. It is different from the Kootu curry of Northern Kerala  were veggies like yam and plantains are used along with chick peas. You can use uzhunnuvada and cut into pieces and make this curry. It is flavorful and tastes delicious, especially these urad dal dumplings which get soaked in aromatic and creamy coconut sauce. Unnakaya

Yet another Malabar recipe and this time it is a delicious snack called Unnakaya.It is a sweet and delicious snack made with plantains and stuffed with a sweet coconut and nut filling.There is also a non vegetarian version with egg stuffing which  is most popular during the Ramadan fasting.Mine is the vegetarian version. Even though it is a very popular recipe, I must admit that I am trying this for the first time and that too after watching many cookery shows and demonstrations to bring somewhat perfect consistency for the dough and shape.My family really enjoyed this yummy snack. Ingredients Ripe Plantain- 2 Coconut- 1/2 cup Sooji/rava- 2 tsp ( optional) Sugar- 3-4 tsp salt- a pinch Raisins- a few chopped cashew nuts- a little ghee- 2 tsp Cardamom- 1/3 tsp To make the filling Heat ghee in a pan and fry cashew nuts and raisins followed by rava.
