Chicken Piccata/Chicken In Lemon Caper Sauce

This is a yummy Italian dish-Chicken Piccata/Piccata Di Pollo Al Limone. Chicken cutlets/thin sliced chicken breast is pan fried and then simmered in a tangy lemon and caper sauce.Picatta means sharp and tangy. This zesty dish with the combined flavor of lemon and capers is a north Italian favorite. Pickled capers are widely used in Italian and Mediterranean cuisine. Instead of chicken you can use any other meat,prawns or scallops.

Ingredients
Chicken boneless 1 1/4 pounds
( or four chicken breasts)
All propose flour- 1/3 cup
Butter- 2 tbs
Olive oil-3 tbs
Shallot- 1 thinly sliced
Garlic-4 cloves
Dry white wine or chicken broth- 1/2 cup
Lemon juice- 3 tbs
Lemon slices-2
Pepper- 1/2 tsp
Salt to taste
Capers drained- 3 tbs



Flatten each chicken breast half  to 1/4 inch thickens. Place each chicken breast on plastic wraps or wax papers and using a chicken pounder gently pound to flatten the chicken evenly.
Coat chicken with flour and shake off the excess flour.
Heat olive oil in a 12 inch skillet over medium- high heat. Add shallots and garlic and saute for few seconds.Fry chicken for 6-7 minutes till both sides are evenly browned up (you can also place sliced lemon,but it is optional). Once the chicken is done remove from the pan and add butter and when it melts add wine and lemon juice,reduce heat to medium. When the sauce thickens place the fried chicken and capers simmer for 4-5 minutes till chicken is cooked and soft.Serve with pasta.

  4. This is one of my favorite chicken recipes, never tried this at home though. After seeing those awesome clicks, I am also thinking of making some, looks so flavorful and delicious Suja :)

Pineapple upside down cake is one of my favorite cakes which I really enjoy while baking. This cake is wonderful, dense, buttery rich with sweet caramelized pineapple.
