   Delicious Mushroom Biryani- South Indian Recipe Mushroom Biryani is one of my favorite ways to eat mushrooms. Delicious and flavorful biryani makes a wholesome meal for weekends or gets together. Mushroom biryani may not be popular, as the meatier versions of biryani, but has a unique taste and flavor. Mushrooms have a fleshy texture, a distinct umami flavor, and make for a pleasant meat substitute. If you want to make it gourmet, use a variety of mushrooms. You can use assorted mushrooms like the white button, shiitake, baby Bella/cremini, pearl oyster mushrooms, or king oyster mushrooms . Together they will add unique textures and flavors to the rice. Mushrooms taste best when fried or sautéed in butter. But clarified butter or ghee has a rich nutty taste and takes the flavor to another level. Mushroom Egg Thoran   Today I am sharing a recipe that is quick and easy to make and is healthy too. Mushroom egg thoran is an effortless side dish for rice. Do you love scrambled eggs?  I make them all the time for breakfast. Mushroom and eggs are the preferred combination for breakfast. Why not try it for lunch? Mushroom, eggs, and coconut are combined to make a delicious, Kerala-style thoran for lunch. Thoran is Kerala's version of a quick vegetable stir fry with coconut and spices. Growing up, we often have scrambled eggs for lunch. Kerala style scrambled egg/ mutta chikkiyathu is slightly browned, and crispy with onions, coconut, and curry leaves. Mushroom is not commonly used to make thoran, but it tastes amazing. The egg and mushrooms taste so good with the sweet crunch of coconut, and the flavor of cumin and garlic. Mushroom Fry

Mushroom Fry Mushroom fry is spicy pan roasted mushrooms.It goes well with steamed rice or fried rice. I used button mushroom for this recipe, you can also use oyster mushrooms which has a meaty texture.  Give this recipe a try,you will surely love it. Ingredients Mushrooms- 8 oz/ 15-18 medium sized Onion - half thinly sliced Curry leaves a few Thinly sliced ginger- 1/2 tsp Cashew nuts- 6-8 Turmeric powder- 1/3 tsp Kashmir Chilly powder- 1/2 tsp Pepper powder- 1/3 tsp Garam masala- 1/3 tsp Salt to taste lemon juice- 1/2 tsp  Clean mushrooms and pat dry with paper towels. Cut each into quarters and mix chilly powder, pepper powder and salt. Heat oil in a pan and fry cashew nuts till golden brown, drain and keep aside. Into the same oil, add thinly sliced onions, curry leaves and ginger. Saute till onion turns translucent. Add the mushrooms and saute in medium high heat for two minutes.
