Saltine Cracker/ Homemade Soda Crackers

Baking partners challenge for March is crackers.There was two types of crackers- Saltine and Graham crackers. This months challenge was suggested by Arthy Sharma. This is my first attempt to make home made saltine crackers. Crackers can be made with  yeast or baking soda. I used fresh mint,salt,fennel seeds and sesame seeds as topping Thanks Arthy and  Swathi for this recipe.

Ingredients
All purpose flour- 3/4 cup
Salt- 1/8 tsp
Baking soda- 1/2 tsp
Cream of tartar- a pinch
Lukewarm water- 1/4 cup
Active dry yeast- 1 1/2 tsp
Water- 3 tbs
Butter- 1 tbs
Oil- 1 tbs

For the topping
Sea salt- 1/2 tsp
Dry herbs or fresh herbs, sesame seeds,poppy seeds or any seasoning you prefer





Bring three tbs of water,one tsp of butter and one tbs of oil to a boil. Stir till the butter is melted. Cool this mixture till warm.
Mix yeast with luke warm water and sugar and keep aside.
In a bowl shift the dry ingredients,flour,salt, baking soda and cream of tartar and mix well. Make a well in the center and pour in the yeast mixture and mix. Add warm water in little additions and mix to form a soft sticky dough. Place in a greased glass dish and cover with cling wrap. Refrigerate overnight so that the dough can rise a bit ( it will not double in sized like other yeast dough)
Pre-heat oven to 200 degree F.
 Bring the dough to room temperature. Dust working surface with flour and flatten the dough using a rolling pin. Make it into a thin rectangle sheet. Fold in both the ends towards the center to resemble an envelop. Turn it 90 degree and flatten again into a thin sheet using the rolling pin. Spread the topping and gently press so that they stick to the dough. Cut them into squares of equal size. Place them on baking sheet. Before baking prick some holes on top with a tooth pick. Bake them in per-heated oven for ten to twelve minutes

Kozhukatta/ Steamed Rice Dumplings Kozhukatta is a traditional Kerala delicacy. They are soft round steamed rice dumplings with both sweet and savory fillings. It is a tasty and guilt-free treat or a snack. At home in Kerala, my mom often made these in the afternoon, so we can enjoy them as a snack at tea time. But you can have it any time of the day and if you have a sweet tooth like me kozhukatta is a perfect guilt-free snack . This is a classic one you will never get tired of eating. It seems like these sweet dumplings is an age-old traditional snack. Kozhukatta is also a popular festival offering. It is made on special days like Onam, Vishu and Vinayaka Chathurthi as offerings. Kozhukatta perunal is celebrated by the Christians of Kerala. It is the day before palms Sunday. Modhak is the North Indian version of Kozhukatta. Kerala style kozhukatta has a sweet filling. Shrimp and Vegetable Pulao

Shrimp and vegetable pulao is a very simple and easy pulao. It is mild and less spicy but very delicious and aromatic. It is immensely easy as a lunch box recipe and also for potlucks. You will surely enjoy this easy pulao. Ingredients Basmathi Rice- 2 cups Shrimp- 150 grams Cut vegetables- 1 cup Onion- 1 Green chilly- 2 Ginger- 1 inch peice Garlic- 4 Red chilly - 1/3 tsp Turmeric- 1/2 tsp Fennel seeds- 1/2 tsp Cinnamon- 1 stick Cardamon- 2 cloves - 4 Lemon juice- 1 whole salt to taste cilantro leaves for garnish Oil 2 tsp Ghee- 1 tsp Clean and marinate shrimp with salt, a pinch of turmeric and chilly powder and set aside. Cut vegetables into small cubes. Here I have used carrots, green peas, beans and frozen corn. Heat oil and ghee in a deep heavy skillet or a pressure cooker and add in the whole masalas and allow them to get roasted. Now add ginger and garlic and saute till the raw flavor disappears. Add in onions, salt and fry it till golden
