Squid  or Kanava fry is a yummy side dish for rice.This is a quick and easy squid stir fry and it is spicy too. Squid is part of the menu in every seafood special restaurant and I always enjoy the crispy fried squid rings. But I also love squid roast and roasted coconut and squid curry.

Squid is enjoyed in the coastal belt of south India especially in Kerala and Tamilnadu.In Kerala squid is known as koonthal or Kanava.This regions  is blessed with abandon variety of seafood and is a paradise for seafood lovers.Seafood curried or fried with rice, vegetable curries are quintessential for our lunch.

 Squid has a mild flavor and can goes well with any flavor. Some are intimidated when it comes to cooking squid.The first time I made it turned chewy and rubbery. But soon I realized my mistake.Squid must be cooked fast over high heat,not more than four to five minutes. This recipe is   pan fried, but if you like it crispy try deep frying. Try this recipe

Ingredients
Cleaned Squid-1 lb
Shallots-15
Thinly sliced ginger- 1 tsp
Curry leaves- a few
Ginger garlic paste- 2 tbs
Turmeric powder- 1/2 tsp
Chilly powder-2 tsp
Vinegar- 1 tsp
Garam Masala- 1/2 tsp
Coconut Oil
Salt-to taste


Clean and cut the squid into small pieces. Marinate with chilly powder, turmeric powder, salt, ginger garlic paste  and vinegar. Keep aside for 10 minutes.
Heat oil in a pan and add chopped ginger, onion and curry leaves. Saute till golden brown. .Add marinated squid  and saute in high flame for 2-3 minutes. Cover and cook for 2-3 minutes.Add garam masala and if there is any water let it evaporate and fry till all the masala gets coated with the squid.Add a few drops of coconut oil and a few fresh curry leaves and switch off the flame.Serve with rice
