Ari Orotti

Ari Orotti Orotti is a simple  and delicious flat bread made with roasted rice flour. Earlier I shared  a recipe for pathiri , the soft and thin flat bread. Orotti is very similar but thicker and crispy. Orotti can be made with rice flour, semolina or wheat flour. Try this with spicy chicken or mutton curry. Ingredients Roasted rice flour- 2 cups Water- 2 cups salt -to taste sugar- 1 tsp coconut oil/butter- 1 1/2 tsp Coconut milk - 1/2 cup Grated coconut- 3/4cup cumin - a pinch Boil water along with salt and sugar. When it comes to a rolling boil add coconut oil. Take the flour in a large bowl and make a well in the center. Gradually pour  water little by little and mix with a wooden spoon . Ethapazham Kozhukatta

Ethapazham Kozhukatta Today's recipe is a tasty and guilt free snack.It is kozhakatta with the different filling. It is caramelized ripe plantain and coconut filling.Usually we use plantain to make ada or puttu for breakfast.But this time I used it as a filling for kozhukatta instead of the usual jaggery coconut filling. It had an inviting flavors of ghee, plantain and cardamon.Serve this with a cup of tea as a snack or as breakfast. Ingredients Rice flour- 2 cups Hot boiling water-1 1/4 cup Salt to taste Sugar- 1 tsp Coconut oil- 2 tsp For the filling Ripe plantain- 2 Coconut 1/2 cup Sugar- 3 tbs (or according to sweetness you like) Cardamon  powder- 1/2 tsp Ghee- 2  tsp To make the filling cut plantains into small pieces.
