Easy Coffee Pudding

Coffee is my absolute favorite, and a good cup of coffee is a good mood. It’s hard to imagine a day without a cup of coffee. So I adore coffee-flavored puddings, especially coffee-flavored chocolate puddings. So I figured it was time to do it again but this time a complete coffee-flavored pudding. The pudding is milky sweet, with an incredibly light texture. The whipped Dalgona coffee is a delicious accompaniment. Dolgona coffee was trendy in social media, and my family adores it. It has a mousse-like texture, and its bitter-sweetness and intense coffee flavor pairs beautifully with the sweet cappuccino flavor pudding. You can swap it for a flavoring of your choice or dress up the coffee pudding with a dollop of vanilla ice cream, chocolate ice cream, or frozen whipped cream. Try toppings like Irish coffee cream or sprinkle with cinnamon or nutmeg for a subtle level of spice. This pudding is an egg-less version but uses gelatin for a pudding consistency. Agar-agar or cornstarch is also a great alternative to gelatin. If you want to try the old fashioned coffee pudding, use egg yolks for a creamy consistency. Condensed milk and cream adds richness to the pudding.
The instant coffee powder itself packs a powerful punch in the dessert, but you can substitute it with espresso coffee powder or team with chocolate for a richer, elegant dessert. Instant espresso can usually be found in the same aisle of instant coffee in your supermarket. Make it you own with your favorite topping, or flavorings like coffee liquor, vanilla, hazelnut, or spices like cinnamon and nutmeg.
To make the pudding with agar-agar you can use around four grams. Dissolve in hot water. Add it to warm milk and simmer for 4-5 minutes. To make pudding with corn starch, make a slurry with three tbs of corn starch and 1/4 cup of milk. Add this to warm milk and cooks till the mixture thickens.
Easy Coffee Pudding Recipe
Ingredients
Instant coffee- 3 tbs
Condensed milk- 1 cup
Milk- 1/2 cup
Whipping cream- 1 1/2 cup
Gelatin powder- 2 1/2 teaspoon
Cold water- 1/4 cup
Sugar- 3 tbs
Salt - a pinch
Vanilla essence- a few drops
For the Dolgona whipped cream
Instant coffee Powder- 3 tbs
Sugar- 3 tbs
Hot Water- 3 tbs
Sprinkle gelatin in cold water and let it sit for 10 minutes. Add the soaked gelatin to warm milk and mix it till it is completely dissolved. Put the cream in a saucepan over medium heat and add the condensed milk, sugar, salt and bring it to a simmer. Add instant coffee and whisk well till it completely dissolves. Strain into a jug and add the melted gelatin and mix. Transfer into glass bowls or ramekins and let it set in the refrigerator for 4-5 hours.
For the dalgone coffee, all you need is instant coffee, sugar, and hot water. You can use a balloon whisk or a hand mixer. In a bowl add 3 tbs of instant coffee and 3 tbs sugar. Now add 3 tbs of hot boiling water and mix to dissolve. Using a whisk or hand mixer, whisk the coffee until it becomes frothy. Continue whisking till it changes color to a pale golden and it forms soft peaks (similar to soft peak egg whites). Spoon in the whipped dalgona coffee on top of the coffee pudding.
