Bibingka/Filipino Coconut Rice Cake Coconut rice cakes is a treat for all coconut lovers. Bibingka is sweet, with irresistible flavor and taste.I love this recipe because it is so easy to make.Sweet rice flour and coconut milk makes this cake spongy and light. Victorian Pound Cake Baking partners challenge for this month is Pound Cake. This cake is known as quatre quarts or four quarters in France meaning four equal portions. The traditional  recipes calls for a pound of flour, sugar, butter and eggs and hence the name pound cake. The most important step in making this cake is the creaming and softening of butter and sugar which results in light even textured crumb. Pound cake are rich butter cake and you can add any flavor of your choice. Victorian pound cake uses rose water as flavoring. Chocolate Heart of Darkness Cakes This is baking partners second challenge recipe for April 2015. It is mini warm molten chocolate cake with a gooey chocolate center. These are highly addictive and can be served warm just like itself or with ice cream. The chocolaty center is attained from frozen truffles with melts as they bake in the oven.  Baking Partners ninth challenge post-Cheesecake. Baking partners is the brain child of  Swathi of Zesty South Indian Kitchen. It is a wonderful group of enthusiastic blogger who try something new in baking every month. Cheesecake is something I have never tried baking at home and this month the group was given four recipes. I loved the recipe suggested by Reeni of Cinnamon and spice and everything nice . It was a bit different from the regular cheese cake. I have seen this before and always wondered at the light texture of this cake. You do not bite into creamy cheese cake but a light, soft airy cake of wonderful texture. At first I doubted whether it will have an overpowering egg flavor as this recipe uses six eggs,but there was no such problem. The cake I made developed two small cracks and I feared it will be deep. Chocolate Mocha Cake  Mocha cake as the name suggests is a dense moist coffee flavored chocolate cake. I adore coffee flavor and the combined flavor will not disappoint you. The frosting is butter cream flavored with cocoa and coffee.This is a delicious cake. I made it a one layer cake,but you can make into a two layer cake as well. Try this,you will surely love it. Neapolitan Christmas Cake  Baking Partners fifth challenge post- Neapolitian Christmas Cake. Baking partners is the brain child of  Swathi of Zesty South Indian Kitchen. It is a wonderful group of enthusiastic blogger who try something new in baking every month. Keeping the holiday spirit in mind Swathi suggested Christmas cake.So for this months challenge theme we had three cake recipes. Among the three I selected and tried the Neapolitian Christmas cake. It is a beautiful tricolor cake which soft,spongy cake layers made with egg whites. The filling is  layers of whipped cream frosting.
