Pavakka Varuthathu/ Fried Bitter Gourd

Pavakka fry is quick and easy side dish and goes well with rice and sambar.I know it is one of the less loved vegetable because of its bitter taste..for some reason I have always loved them.Usually I make mezhukkuvaratti or pachadi but this fry is something I love to have occasionally. Try this crispy and spicy pavakka fry, you will surely love it and believe me,you will not feel the bitterness :)

Ingredients
Bitter Gourd/Pavakka- 2 medium
Onion sliced- 1 medium
Green chilly- 3
Coconut sliced- a few
Chilly powder- 1 tsp
Turmeric powder- 1/3 tsp
salt to taste
Rice flour-1 tsp (optional)
Corn starch- 1 tsp( optional)
oil for frying

Cut bitter gourd into thin slices and mix in green chilly, coconut slices, chilly powder, turmeric powder and salt. Set this aside for 10 minutes. Heat oil in a pan. Mix in corn starch and rice flour into the marinated bitter gourd just before frying.
When the bitter gourd starts changing color to golden brown add in sliced onions and fry them all together till crispy. Use paper towels to drain off the excess oil.Serve with rice.

Try this...
Hope you will all enjoy..

Pineapple Coconut Cake

Pineapple coconut cake is now my top favorite cake:) This is an easy and fragrant cake, sweet a little tangy, flavorful and buttery. If you like the combined flavor of pineapples and coconut you will surely love this. I have used sweetened pineapple in this recipe. You can use fresh pineapple with its juice which will make it even more flavorful. I did not add sugar as I have used sweetened pineapple, coconut and sweet condensed milk. You can add sugar as per your taste. It would be great with butter icing .  I used  whipped cream and pineapple rings and dusted with a little of confectionery sugar. Ingredients Flour- 1 1/4 cup Baking powder- 1 1/2 tsp Salt- 1/3 tsp Sweetened Coconut- 1/2 cup Sweetened Pineapple- 8 oz container Eggs- 3 Butter- 1/2 cup Vanilla essence- 1 tsp Condensed milk- 1/2 cup nutmeg powder- a pinch Preheat oven to 350 degree F. Prepare cake pan by greasing with butter and dusting with flour and set aside. Mix well the dry ingredients like...

Undan Pori

Undan Pori Today's post is a delicious snack usually common in small restaurants and tea stalls of Kerala. It resembles very much to the unni appam yet it is different in its taste and texture. Undan pori  is crispy and crunchy and at the same time soft and spongy inside. This snack was regularly seen in our college canteen. But this humble snack was brought it only if there was a shortage of uzhunnu vada and parippu vada. It sounds funny but being away from Kerala I felt a craving for this snack and tried it once, but I did not get the perfect chayakada/teastall taste. When I saw this recipe in Swathi's blog -Zesty South Indian Kitchen-I knew this was the perfect recipe. I tried it and it was really delicious. Thanks Swathi for the recipe. Ingredients Wheat flour- 1 1/3 cup Rice flour- 1/3 cup (optional) Baking soda-a pinch Jaggery- 3/4 cup Small banana mashed-3 Cardamon  powder-1/3 tsp Ghee- 1 tbs Coconut pieces- 1/3 cup salt- a pinch oil for frying ...
