Liver Varattiyathu

Liver Varattiyathu
Liver recipes is very popular in Kerala. I have already posted a chicken liver fry. This is a different preparation and is spicy and delicious with very less gravy. It is spicy and peppery. You can increase or decrease pepper according to taste and spice tolerance. It is a very quick recipe. All you do is pre-cook the liver with spices and finally roast it with little oil and curry leaves . Try this you will surely love it...

Ingredients

1)Chicken/Mutton Liver- 1 lb
Shallots sliced-  1 1/2 cup
Ginger sliced- 2 inch peice
Garlic- 2-3 pods
Green chilly- 3-4
Turmeric  powder- 1/3 tsp
cumin- a pinch (optional)
Pepper powder- 1 1/3 tsp
Coriander powder- 1/2 tsp
Fennel powder- 1 tsp
Clove powder- a pinch
(you can also add just 3/4 tsp of garam
masala instead of fennel and clove powder)

2)Curry leaves- two springs
Sliced ginger- 1/2 tsp
Coconut oil- 3 tsp
salt to taste

Cut liver into desired cubes. Rub with salt and turmeric powder and wash liver pieces thoroughly at least three to four times and drain out all the excess water and keep aside.
You can use a heavy bottom pan with a lid or the pressure cooker. If using pressure cooker do use whistle.
Put all the ingredients listed under 1 and add three tsps of water. Do not add too much water  as liver will start oozing out water. Add salt only when liver is almost cooked other wise it can make it tough. Cook this in medium flame for 8-10 minutes and add salt continue to cook without lid till all the water get evoporated.
Heat coconut oil in a fry pan and add ginger and curry leaves and roast till there is a nice aroma. Add the cooked liver and saute and till all the masala gets well coated and gets slightly roasted. Serve with rice, bread or chapatis..

Try this..
Hope you will all enjoy..

Spiced Pineapple Pickle- Kerala Pineapple Achar

Spiced Pineapple Pickle- Kerala Pineapple Achar Pineapple pickle is a delicious pickle, fresh and bursting with tropical flavors. Pineapple pickle has a sweet and savory combination and adds a zesty kick to any meal. Do you like sweet and spicy pickles?. I love pickled, salted, and fermented vegetables and fruits . It is easy-to-make condiments and a must-have in my kitchen. My family favorites are sweet and savory pineapple chutney and spiced pineapple in salted brine. Salted pineapples are good on sandwiches, fish tacos, or roasted meat. The best part of this pickle is that you can use it just like chutney or salted pineapple. The pickle is for those who love to take the spice level a notch higher. Pineapple pickle is a tongue-tingling sweet, tangy, mildly spiced pickle. It is delicious, and the flavor and taste are irresistible. It can be paired practically with everything, but it is best with parathas and naan. This recipe is from my mother-in-law. Sweet and sour pickles a...

Chemmeen Theeyal - Prawns in Roasted Coconut Gravy

Prawns Theeyal Theeyal is one of the most cherished dishes of Kerala and lip-smacking delicious. It is a very traditional curry with a saucy tangy gravy with a rich dark color. It is a versatile gravy and you can use any vegetable of your choice. So now let's talk about the gravy. It is spicy and tangy coconut gravy and its wonderful aroma comes from roasted coconut. Perfectly roasted coconut brings in the rich dark color, right flavor, and consistency. The gravy is simmered in tamarind sauce. There is a beautiful balance between the nutty sweet flavor of roasted coconut and the slightly tangy taste of tamarind. Added to this is the taste of prawns. Pearl onions or small onions add richness to the curry. Now when I say pearl onions, I mean a lot! You need lots of pearl onions in this curry. Theeyal sounds elaborate cooking, but it is a delightful curry and is worth the effort. This chemmeen/prawns is a great side dish for rice or pathiri. Theeyal is part of Kerala ...

Sweet Kozhukatta/ Steamed Rice Dumplings

Kozhukatta/ Steamed Rice Dumplings Kozhukatta is a traditional Kerala delicacy. They are soft round steamed rice dumplings with both sweet and savory fillings. It is a tasty and guilt-free treat or a snack. At home in Kerala, my mom often made these in the afternoon, so we can enjoy them as a snack at tea time. But you can have it any time of the day and if you have a sweet tooth like me kozhukatta is a perfect guilt-free snack . This is a classic one you will never get tired of eating. It seems like these sweet dumplings is an age-old traditional snack. Kozhukatta is also a popular festival offering. It is made on special days like Onam, Vishu and Vinayaka Chathurthi as offerings. Kozhukatta perunal is celebrated by the Christians of Kerala. It is the day before palms Sunday. Modhak is the North Indian version of Kozhukatta. Kerala style kozhukatta has a sweet filling. It is a quick recipe with very few ingredients, rice flour, coconut and jaggery being the tastemakers. Do ...
